Connie's Zucchini 'Crab' Cakes
Thank you!!! I doubled the recipe because I had the zucchini on hand. Could some zucchini be moister than others? I had no problem at all with the mixture being too wet. Doubled the Old Bay spice and added oregano, salt and pepper to the breadcrumbs. My sweetie and I ate about 2/3 of the doubled recipe with cut veggies and dip at lunch then finished off the rest of the cold cakes for dinner! WONDERFUL!

Parmesan and Broccoli Stuffed Potatoes
The kids snarfed this up and wanted a lot more. A success! I made my own cheese sauce, as we don't have that sort of sauce in a jar in Germany. It was yummy and low fat too.

Baked Orange Roughy Italian-Style
Wonderful flavor and very low fat, as I only needed a tiny bit more than 1 T. olove oil instead of the butter. My 11-year-old son ate three portions, and our daughter (13) had seconds. A real hit for this household. Will definitely make it again. Thanks!
