I agree that a good prepared salsa would be just about as good and less work. Another way I make it easier is to use rotisserie chicken, which also adds some nice flavor.

Sloppy Joes II

I'm sure these are even better with the ground beef, but in the interest of better health I used extra lean ground turkey breast. I ran out of ketchup, so I ended up using about 1/4 cup BBQ sauce and throwing in two spoonfuls of mild salsa. It was delicious!

I've made this once and used a pork loin roast and I felt like the pork was too dry. Otherwise, I think this would have been really excellent. I'll try again with the pork shoulder.

Oatmeal Chocolate Chip Muffins

After taking her first bite of these muffins, my 10 yr old daughter said..."Mom, these are the first muffins I ever loved!" They were excellent...pretty healthy/hearty with a touch of chocolate. I used mini chocolate chips and halved the amount since I don't like to have a sugar high at breakfast. I thought this was perfect.

Groovy Green Smoothie

4-star on taste, 5-star on health! You really can't taste the spinach...a great way to sneak those leafy greens to your kids! I have an anti-banana family and even cutting back to a half of one didn't stop the gags...next time I'll use pineapple (which will preserve the pretty green color) and I know they'll love it. I froze the grapes so they were like little ice cubes to make the smoothie extra cold. Dairy also bothers some in my family so I replaced the yogurt with vanilla almond milk and it was still delicious. This is refreshing change from the standard berry smoothie!

Crustless Spinach Quiche

I like a little more flavor, so I replaced a portion of the Muenster with some herb feta...just right! I really like the lack of crust...a tad more healthy and just as good.

When I make this again for my family, I will cut the pepper in half and use just over half of the soy sauce, adding water to equal the 2/3 cup. My kids really love this dish!
