Chicken Pot Pie I

This was VERY easy to make!!! I used a precooked seasoned rotisserie chicken from the grocery store. This definitely needed more soup so I added two cans plus a bit of non fat half and half that i had in the fridge. I was out of cream of chicken soup, instead I used two cans of cream of celery. It was very good. The soup added some new and different flavors to the pie that my family really enjoyed! Also used frozen mixed veggies. I cooked them first to soften them up. This is definitely a keeper!

After-Thanksgiving Turkey Soup

FABULOUS SOUP!! This was so easy to make and exceptionally good to eat! I used fat free half and half and extra veggies. I also added a clove of garlic and some sprigs of fresh rosemary and thyme to give it an extra flavor boost. serve with a loaf of crusty bread... YUMM!

Kristen's Awesome Oatmeal Cookies

These are fabulous cookies! I used 1/2 cup butter and 1/4 cup shortening. They were chewy and slightly crisp. Oatmeal cookies are my favorite, and now this is my favorite recipe to make them!

Very Best Blueberry Cobbler!

In the words of my son "this is amazing!" I loved the cake like texture of the topping though I added extra sugar and cinnamon on top for extra crunchiness. It was very good.I served it warm with vanilla icecream. YUM! This is definitely a keeper!

Texas Pie

This dessert is HEAVENLY!!!!!! It was so easy to make too! My kids enjoyed putting the dessert together. I cant wait to try it again. definitely a keeper!

Harvey Wallbanger Cake

Gingerbread Men

This is one of the yummiest gingerbread recipes I have ever tasted! My kids thought it was great because it did not have a really heavy molasses flavor. The pudding makes the cookie moist and it has just the right amount of ginger flavor. THe dough was very easy to work with too! This is an al around great recipe! Definitely a keeper!

Downeast Maine Pumpkin Bread

This was excellent! It was a very moist bread with lots of flavor. However, I like a bit more spice so nest time I will add extra cloves and cinnamon. I did not have three smaller pans so I used two 5x9 loaf pans. They worked fine, I just had to bake the bread for about 8-10 minutes longer! I can't wait to make more!

Tomato Soup Cake II

This was one of the best spice cakes I have ever made! It had a great full, moist texture packed with plenty of spice. I would not change a thing! Even My picky kids loved it! It was very easy to make too. My son said it reminded him of a carrot cake without the carrots. I thought it tasted like gingerbread, but we all agreed it was fabulous!

A and Z Dip

THis was really yummy, cool and refreshing! I made a few changes though: I could not find pico de gallo seasoning so I used about 1/2 tsp of taco seasoning, added chopped green onions, Chopped water chestnuts, and 1/4 to 1/2 cup extra sour cream. Also I used marinated artichoke hearts for a little extra flavor. I served it with veggies and everyone loved it!

Hot Mexican Spinach Dip

This is so yummy and so easy!!!!! I used mexican seasoned shredded cheddar for an extra zing and added a few real bacon bits for flavor. It was a hit! it made a large amount of dip but was consumed very quickly.... I will definitely use this recipe over and over again!

Easy Roasted Red Pepper Hummus

This was very tasty and exceptionally easy to make! I could not fing tahini in a small container so I made my own with roasted sesame seeds blended with olive oil in the food processer. Although this was tasty, you neeed to be careful to not over cook the seeds or else you will have a burnt taste. I also recommend a little less lemon juice. I thought it was too much.

Artichoke Bites II

This was a total hit with my bunco Group!I made a few changes though.... I added finely chopped water chestnuts and bacon pieces. I waited until the very end to add the artichokes so they would be a little more chunky. I thouhgt the 8 eggs was the perfect amount. The recipe made a large amount of servings but they were consumed quickly! This one is a winner!!!!

Betz's Good Sugar Cookies

This was a yummy cookie! The Lemon extract really made a difference. I made two batches, one with butter and one with margarine. I would highly recommend using margarine. Although the dough was more sticky,( I had to add a bit more flour) It cooked up nicely. THe batch made with butter started off less sticky and more firm, but when I cooked it , it spread out too much on the pan. They both tasted great, the butter batter being more crisp and delicate. I would definitely make these again, but will use margarine!

Hot Fudge Ice Cream Bar Dessert

This is absolutely heavenly!! As a different twist, i omitted the ice cream sandwiches and instead used peanut butter oreos crushed up as a layer, then topped with softened vanilla ice cream. It was fabulous!

Best Carrot Cake Ever

This recipe was fabulous! Very moist and dense. I like my cakes a bit more spicy so I added an extra teaspoon of cinnamon, 3/4 tsp nutmeg and a dash of cloves! everyone loved it!
