Buttery Corn Bread

FINALLY! I have found my keeper cornbread recipe!! Just a hint of sweetness and no need for buttermilk. I was able to substitute Earth Balance for butter and Rice milk so that my milk allergic son could enjoy the bread as well.

Eggplant Parmesan II

I love the no-fry aspect of this dish. But the amounts are off (I used 2 eggplants, 4 eggs and 2 c of bread crumbs). Also - how thin is "thinly" sliced (I did 1/4" slices) sliced horizontally or vertically? I like more specifics. Besides the no-fry I chose this recipe b/c I didn't have to salt the eggplant and let it sit. However, now I'm sorry I didn't because it turned out tough. Good idea, but disappointing results.

Yum! I halved the recipe but inadvertently used the full amount of pumpkin. They were still good, so I can only imagine how yummy they will be when I make them properly :-)

Whole Wheat Chocolate Banana Bread

Loved this recipe - my husband, who is not a big sweets eater, raved about it. I love that the cocoa masks the wheat flavor so my two little ones think they are eating "chocolate bread". My mods: used 1/2 white and 1/2 wheat flour, decreased nutmeg to 3/4 t and used rice milk so my milk allergic son could eat it. Also, it only took the loaf about 45 minutes to bake. I will absolutely make this again!

This sauce was DELICIOUS! We cut the brown sugar in 1/2 and it was still plenty sweet. Absolutely in our dinner rotation, albeit a bit time consuming.

Amish Breakfast Casserole

Yum! I could eat this for breakfast, lunch or dinner. We used canadian bacon instead of regular bacon and added 2 more eggs. Also, next time I'll save the money and not buy the pre-shredded hash browns and just shred my own potatoes to add.

Spinach Dip with Water Chestnuts

OMG - NO ONE at my party didn't NOT like this dip. They were eating it with veggies, with the Hawaiian bread chunks I tore up and the pita triangles I set out for the hummus! It was a hit to say the least.

Chicken and Dumplings I

Good soup but I can't give it 5 stars since I had to add a lot of seasonings to make it good soup! Bay leaf, peppercorns, carrots, onion and celery to make the broth. These dumplings are egg noodle dumplings, not biscuit dumplings which taste very different but I love them both!

All Day Apple Butter

Yum! I can't believe how much over 5lbs of apples can cook down. I only used 2 c of sugar and it is plenty sweet. It's great that this takes all day to cook because it makes the house smell great.

Old Fashioned Potato Salad

Love it!! Just what I think of when I think "traditional" potato salad. I think you HAVE to use the sweet pickle relish. My only complaint is - how much is "5 potatoes"? I prefer a weight - I think I used about half of a 5 lb bag of red potatoes and upped the dressing a bit. Also, a good think to remember is to cut your potatoes up BEFORE you cook them if they are not pretty uniform in size. Two of mine were a good bit bigger than the others and they ended up rather al dente (not what I want in my potato salad!)

Speedy Ice Cream

I give this 5 stars for it being so simple, unusual and great for kids to participate in. It works but the ice cream melts pretty fast and the consistency is pretty soft but it tastes like ice cream and my 3 yr old loved it from start to finish.

Five Minute Ice Cream

We usually make our smoothies with frozen fruit and some fruit juice so this was an easy switch - just use cream instead of the fruit juce. Not quite as healthy but it surrrre is tasty!

Ambrosia Salad

I love this stuff!!! I use 2 cups of mini marshmallows (the multi-colored version) and only 3/4 c of sour cream. I think using sour cream is so much better than the Cool Whip that other Ambrosia Salads call for. It's just too artificial for my liking. Make sure the salad is nice and cold before serving.
