Bubba's Jambalaya

Really flavourful! For ease and to save time, we used real bacon bits instead of frying bacon, omitted the ham, used turkey sausage, 2 cups of cooked brown rice (left over from the night before), 2 cups of tomato sauce and 1 cup of chicken broth and added everything to the slow cooker. Cooked it on low for 6 hours and added uncooked shrimp the last 5 to 10 minutes. It was sooooo tasty. The rice was a bit over done so next time I'll try using uncooked rice and all the liquid like the recipe says but still in the crockpot. Thanks Fordman!!

Seven Layer Tortilla Pie

This got rave reviews from my husband and his dad who doesn't eat red meat. I would have used refried beans like other reviewers suggested but didn't have any on hand so used 1 can of Heinz baked beans in tomato sauce instead to replace the 2 cans of pinto beans. I mashed them up, added some taco seasoning and cumin and carried on with the recipe. I also warmed the tortillas in the oven prior to putting the pie together so that they would be a bit crispy and not get soggy like some had complained of. This helped a bit I think. Also had to cook longer than 40 minutes for the middle to heat up. Served with guacamole, salsa, and jalapenos!! Yum, YUM, YUMMY. Thanks for the easier, vegetarian meal.

Chickpea Curry

This was just what I was looking for. But definitely better the next day. I took other reviewers' advice and added 14 oz canned diced tomato, 1/2 tsp of cloves, 1 tsp. ground cinnamon. I also added a bit of garlic salt and some curry to taste. I love, love, love, cilantro so that made all the difference in the end. My hubby is not a fan of cilantro so the dish wasn't not his favorite. Too bad for him. He can eat steak!

Creamy Orange Fluff

The two layers don't work. The bottom jello layer is really good but the pudding cream cheese topping is too thick and gummy. We scraped it off. I ate the bottom but my husband and daughter ate the top. They don't like fruit in their jello I found out!! I will not make it again. I actually scraped off the pudding layer and added it to peach gelatin and 1 cup of boiling water to see if I could save the ingredients. Added a cup of crushed pineapple and it is setting as I type this review.

Baked Macaroni and Cheese with Tomato

I've been looking for a recipe like this. My mother-in-law always makes a tomato macaroni casserole and my husband always asked me to make that for him. This is better with the cheese and onions and I enjoy it now too.

Cranberry Oat Bars

Very tasty. I used a 14 oz can of whole cranberry sauce instead of cooking frozen/fresh cranberries. It made the recipe even easier!! Like other reviewers I fit all into a 9 x 13" pan. Thanks for the recipe...I was searching for awhile for this one.

Cilantro Chicken and Rice

I found it bland and I even added a bit of cumin and chili powder. I also let it stew too long which made the whole skillet mixture mushy. I agree with the reviewer who added the cilantro at the end to keep it fresh.

Sylvia's Ribs

Thanks, these are the only ribs I make!! I love that you can add or change ingredients based on what you have on hand. I use less ketchup (1 cup)and add 1 cup of tomato sauce. I've used all honey when I don't have any brown sugar and have even used some corn syrup or maple syrup. They always are delicious!!

Wheat Germ Whole-Wheat Buttermilk Pancakes

To kick up the fiber I added 2 Tbsp ground flax seeds, 1 cup quick oats and reduced the wheat germ to 1/4 cup. Also added 1tsp vanilla. My kids love them. There even good toasted out of the freezer.

Martian Cookies

For a healthy cookie these hit the spot. I used brown sugar instead of white and cut it down to 1/2 cup. Also I used all whole wheat flour. The butterscotch chips make these phenomenal and so you don't miss the sugar. Thanks for a way to use up all the zucchini I've got in my freezer!

Tortilla and Bean Soup

So good!!! Of course I made a few additions.. I used chicken broth rather than water, and canned chicken for a quick alternative. For those like me who didn't know what ranch style beans were, I used Heinz baked brown beans in tomato sauce, and corn instead of hominy. What is hominy anyways? I also added 3 tbsp of fresh cilantro and put avacado and cheddar cheese on top. Addictive meal!

Vegetarian Tortilla Soup

I too added a can of black beans, some chili powder, and some taco seasoning. It turned out terrific! My 3 and 1 year olds even licked their bowls clean and my husband who dislikes peppers ate 2 bowls.
