Potato and Cheddar Soup
I REALLY enjoyed this recipe. My husband and best friend had never tried a potato soup before, and they raved about it. I, being allergic to onions, had to omit that, but did saute them on the side for the others to eat. I also added crumbled bacon with the ham, more cheese and LOTS of black pepper. Had a beautiful consistency and great flavor.

Roasted Root Vegetables With Apple Juice
Because of my location, I couldn't find turnips or parsnips, so I used parsley root and something that the name translates to radishes, but looked more like giant parsnips (and tasted like uncooked frozen french fries)... I enjoyed it, and so did my guests. And none of us are huge vegetable eaters. =) I might make again for thanksgiving or other large feast.

Maple-Drizzled Apple Muffins
YUMMY is the only thing I can say. I did change it just a bit, by shredding the apples instead of chopping them, and adding a touch of allspice and nutmeg. Not too sweet, not too oat-y. Thanks for the recipe! I'll be using it again and again =)
