I have been married for about a year now and absolutely love trying new recipes on my husband. He enjoys it as well and is a great sport when it comes to tasting something new. I work as an office manager at a dental office and often make quick and easy meals throughout the week -- like slow-cooker meals. But on the weekend, I love to spend all day in the kitchen!
My favorite things to cook
I first fell in love with baking. I loved to make cookies and pastries. I quickly realized that I would serve a quick, simple dinner and then have an extravegant dessert so I began to focus more on cooking, broiling, grilling, etc. I now enjoy it all! I love to try something new.

Chip Chicken Lollipops
These were a huge hit in our house! I made them with sour cream and onion chips -- our fav and everyone loved them! My 19 month old twins ate them better than any other chicken nugget type food they've ever had! I was so flattered they enjoyed my baked chicken better than chick fil'a's fried chicken!

Easy Enchilada Casserole
Delicious! I made this for my husband and my brother and they both loved it!! I made it exactly as directed except I added taco seasoning when cooking the shredded chicken. I baked this in a 9x13 pyrex dish and had enough for 6 meals!! Its a hearty dish. Next time I make it I will only make half -- in a square baking dish. It does rehead well, not as good as the first time, but good nonetheless. Will surely make again!

Sweet Potato Pie I
This pie is amazing!! There is a local restaurant that is known for their amazing sweet potato pie. This definitely rivals it! Its not the same (I was hoping for a perfect match) but it is just as good. One of my friends is trying her hardest to figure out what is in the secret recipe in town, when I brought her this pie we agreed it wasn't the same, but it was JUST AS GOOD!!! We no longer have to search for the elusive recipe because we have a replacement. Since I discovered this in November I have made 7 sweet potato pies. Every time its a winner and a favorite. Thank you VERY much for sharing this recipe with us. No doubt, I will make again and again...
