I'm the mother of two grown children who is spanning the gap between formerly large family meals and future family+grandchildren meals by cooking at the local homeless shelter at least once a month. Any recipes that are simple, nutritious and easily expandable to 150-200 servings are VERY welcome!

Carrot Burgers
As a soy-sensitive asthmatic who is trying to go meatless at least once a week, this recipe is almost too good to be true. I added one small baked sweet potato to extend the recipe without adding more cereal, used large eggs and a dash or two of worcestershire sauce. It turned out great! I'm going to try it as a 'meatloaf' next.

Apple Butter Cookies
I make my own apple butter each Fall and these are a perfect way to use up the end of last season's batch! Nut sensitivities necessitated substituting chopped dried apple (use scissors) in place of the nuts and they were YUMMY!

Wisconsin Cheese Soup II
This recipe arrived in my email on a stressful day and was the perfect solution: fast, easy, all-ingredients-on-hand comfort food. My son liked it so much that he printed out a copy of it to give to MY Mom!
