Cupcakes galore...
About this Cook
Baking is usually just something I do when I am bored. So it's generally a winter/fall thing. I never make the same recipe twice exactly the same. Also, I don't use cake mixes! ICK! Eating healthy is important, so I usually take out egg yolks, use whole wheat flour when possible, and reduce the sugar. (Not always...my Christmas cookies are perfect without substitutions and my grandmother would kill me if I did that to her beloved recipes!)
My favorite things to cook
I'm a baker! Cakes are my specialty- mainly white cakes because I am not a fan of eggs. But I definitely have a sweet tooth and always change recipes according to my taste.
My favorite family cooking traditions
Probably like most people's. Ham on Christmas and Easter; turkey, green bean casserole, mashed potatoes at Thanksgiving. One tradition I'd like to start is having black eyed peas on New Year's Eve.
My cooking triumphs
My salsa is a hit in the neighborhood. Also, my hubbie loves my quiche (a few tweaks on Emeril's pie crust, and a filling of my own). My little ten year old claims my Lady Baltimore Cake to be her favorite.
My cooking tragedies
I can't seem to be able to make bread! Probably because I am impatient, but either it doesn't rise, it rises too much then falls, or it tastes horrible! Yeast and I don't get along! Fudge is also a problem for me. It may also have to do with my impatience!

Blue Cheese and Pear Tartlets
Everyone enjoyed these when I made them as an hors d'oevre for the neighborhood barbecue. They're better for fall/winter but I wanted to make them in the summer, and they were excellent.

Angel Pillows
This, I found as well, has the texture of a biscuit but is still rather moist inside. I don't know how it would taste without the frosting, but I doubt most would care for it if one was looking for something in the cookie line. Two children in my family wouldn't eat them, but the adults loved them. I used pineapple/apricot preserves and that worked fine, but I will double the amount next time. This recipe is also great because there are no eggs and not a lot of sugar, and I used low-fat cream cheese so it would be a little more healthy.

Busy Night Turkey Taco Soup with Avocado Cream
AWESOME and EASY...I used a pound of ground turkey breast and sauteed it with olive oil then added the ingredients to it and voila...Tastes better with some grated cheddar cheese and sour cream. I didn't have avocado anything so it was perfect with the sour cream and cheese.
