Fruity Curry Chicken Salad

This is so delicious. I used more than double the curry, because I love it so much. My kids weren't overpowered by it, so I think the amount listed in the original recipe is too little. I didn't measure anything else, and just added until it tasted fantastic. And it sure did!

Dad's Steak Rub

My kids really loved this. It is simple and the flavors are subtle, but it brought out the flavors of the meat exactly the way they wanted. They have already announced they want steak cooked this way again, which is pretty unusual.

These were pretty unappealing to us, in all ways. They didn't hold together very well and just didn't look or taste great. I can appreciate the idea behind them, it just didn't work out for us.

White Cheese Chicken Lasagna

This was soupy when it came out of the oven, and I was wishing it held together better. The taste was rich and tasty. I thought it was really improved later -- 30-40mins, and even better the next day when reheated. When I cut a slice to reheat the next day, there was no issue with it staying together and the flavor was great. Also, I had a hard time spreading the ricotta. Next time I might mix with egg like someone else suggested.

Rempel Family Meatloaf

This is very good, and different from usual meatloafs (which are not normally a hit in our house). I used 4% fat beef and it worked beautifully. It does remind us of a giant cheeseburger, which is not a bad thing!

Cheesy Ham and Hash Brown Casserole

I let my 2 boys rate this one since they have huge appetites - they both said 5 stars. I thought it was a little salty, but good otherwise. I sauted chopped onion and added it, tasty recipe.

Funky Enchilada Casserole

This recipe tastes good, but there's nothing to bind it together. It's not exactly dry, but it's missing something. It called for a lot of garlic, which was okay for us, but might be a lot for some. I upped the spices and made sure my chicken was seasoned, but still felt it was lacking something to hold it together. I wondered it refried beans would work better, but I think there would also need to be cheese mixed into the recipe. Maybe hot sauce too - too much overhauling to try again :(

Butternut Squash Risotto

This was unbelievably good! We tried it before adding cheese and thought it was great, then went ahead and added the cheese. So rich and creamy. Every member of the family liked this. It takes awhile for the rice to soak up the liquid, but otherwise it's and easy and impressive dish.

Slow Cooker Barbecue Ribs

These didn't work for us at all. There was a huge pool of grease floating on top of the BBQ sauce that I had to keep spooning off into a coffee can. Once they came out, they still seemed greasy. It seemed like the meat was infused with all that oil. I don't think I'll cook ribs this way ever again.

Raspberry Coconut Layer Bars

All the ingredients in this were good, but it didn't come together for us in taste the way it did for so many others. It tasted like each flavor was resting on top of the other. People ate it, but didn't go nuts for it. I was disappointed.

Pumpkin Cheesecake Bars

Whoa these are quite delicious. Tastes like eating a mini-cheesecake. I read the review of the person who said she'd like more filling and less crust and made more filling. Good plan! Very decadent and still easy to put together.

Chicken Biscuit Potpie

We couldn't believe how good this was, perfect for a busy Fall night. I saw how others ate it in a sitting, so I doubled it. I also boiled one potato al dente and chopped it up to mix in. I used a 9x13 glass pan and spread 2 cans of crescent rolls out flat in a sheet on top. I baked on lower heat (325-350)so they'd cook all the way through. Delicious.

Jeannie's Famous Potato Hamburger Casserole

This was pretty bland, especially considering I seasoned along the way. I was expecting it to be similar to Scalloped potatoes and onions from this site (that one has no cheese though) and prepared the potatoes similarly. My kids did like it, it just wasn't worth all the preparation steps to keep making it. It wasn't difficult, just time consuming.

Smothered Mexican Lasagna

There wasn't too much liquid in this (think of how much you use when adding seasoning packets to ground meat!) and it was a huge hit at our house. I did add refried beans because I'm into them. It was better than I expected.

Baked Potato Soup III

My sons loved this, absolutely loved it! My older one ate it for breakfast and took it in his lunch, that is how much he loved this soup. I'd give it 5-stars except I thought it was really starchy. I know potatoes ARE a starch, but somehow baking them brings it out in a way that didn't work for me as much as it did for my boys!

Chicken Crunch

Kids loved this. Seems similar to other recipes that have a vegetable in it. I used multi-grain crackers on top. Oh, also I only slightly browned the chicken before sending it into the oven. 30 mins. cooked everything - any longer would have been a leathery mess.

Brown Sugar Meatloaf

This was good, though sweet as others have stated. Also, I have one kid who doesn't like ketchup at all. I thought it would be disguised well enough when it all cooked together because of all the other ingredients, into an unrecognizable glaze, but NO! While it was cooking, he kept saying, "The whole house smells like ketchup, I'm going to gag!" A bad sign before it even made it to the table. Still, the rest of us liked it well enough and even the anti-ketchup kid ate everything that wasn't touched by the offending sauce!
