Mexican Shepherd's Pie
My 2-year old daughter loved this! I did add some stuff to make it more like the tamale pie I remembered as a kid. I added a drained can of kidney beans, and I added an extra cornbread mix because I thought the beans might have beefed it up enough for me to need more cornbread. I thought it was too much cornbread in the end, but my husband said he liked it that way. I also used mexicorn.

Quick Artichoke Pasta Salad
It wasn't super-flavorful, but it was super easy. I really liked that about it. I used ditalini pasta. I left out mushrooms because I don't like them, and added roasted red peppers. I think it would be good if I added feta. It wasn't that it needed more dressing. It just needed more "something."

Zucchini Herb Casserole
I changed this up a bit. We had a HUGE bunch of home garden vegetables to use up, so I added carrots and fresh basil along with the zucchini and tomatoes. I used shallots instead of green onions because that's what I had, and I used a wild rice box mix with the seasoning because I read this was a bit bland. I loved the result! It was good, cheesy and felt homey and light at the same time.
