About this Cook
Mom's meat and potatoes raised me, but the rest of the world's cuisine has been my playground ever since. I live to try new things and appreciate traditional classics. Until I was divorced I never fully appreciated the efforts that were made to put something tasty and satisfying on the table each day. Now I try and recruit EVERYONE to learn at least one dish they love to prepare and be proud of!
My favorite things to cook
Appetizers are my favorite because like tapas, you can try many different things without being "stuck" with a risky choice. Dry rubbed ribs, barbeque beef, scotch eggs, Thai noodle dishes, rich soups, ANY kind of sandwiches (reubens, hoagies, Cubans, paninis, etc.), thin crust pizza, pork in every shape, fish steaks and shellfish... yes, I need to eat more vegetables.
My favorite family cooking traditions
Three turkeys on Thanksgiving (1 ea. in oven, roaster and deep fryer). Mom's Christmas rolls, Maurice salad, apple pizza, baked salami loaf, heart-stopping baconcheddaronion scalloped potatoes with WAY too much butter on the grill, scotch eggs and buffalo wings in the turkey fryer on Thanksgiving(also known among friends as the Holiday of Elastic Waistband Pants), Steve's 12 bean chili, Pete Sarah's hummus, Frankie's jam, Chris' bread pudding, Laura's spedini, Karen's Finnish poulla, Dad's fried Spam or SOS or sauteed 'shrooms for steaks, Jean's holiday slush, Maggie's choc chip cookies, Jane's beans.

Chocolate-Banana Creme Pie, Deep-fried turkey, Salmon en papillote, Curry Chix Salad Croissants, Carolina Pulled Pork, Enchilada-stuffed peppers

Gravy Burgers (great concept, bad reality), Deep-fried turkey (dental records couldn't confirm the identity)

Fettuccini Carbonara
Very simple with great results. Had to make do w/o shallots and subst. 2% for cream. Topped w/ pesto chix breast for tasty, colorful & quick supper with a beautiful aroma (bacon, onion, garlic) which filled the house.

Chocolate Banana Cream Pie
Very simple recipe with excellent results. Not much banana flavor so I may use banana pudding and/or a dash of banana liquor next time. Added sliced strawberries on top which had the kids calling it the 'banana split pie!' First dessert gone at the birthday party this weekend. Thanks so much.

Sweet Potato Pie I
Incredibly simple and great flavor. As suggested I used half brown and half white sugar, added some ground ginger & cloves, as well as topped with a few homemade pralines after baking. Even with storebought crust it won raves! Thank you, thank you!
