About this Cook
I am a working mom of 3. My hubby is on the road alot. My meals need to be something quick or prepared ahead of time, and healthy too.
My favorite things to cook
I mostly enjoy baking with my children.
My favorite family cooking traditions
My mom stayed at home with us until I was in high school. She could whip anything up in minutes with whatever she had on hand and it was always delicious. She is now cooking for an assisted living facility and still loves to cook and try new things.
My cooking tragedies
Why dwell on the bad stuff? In 9+ years of marriage my husband only opted for a pb sandwich over what I made once.

Sweet Potato Pecan Pie
Wow! I overcooked the topping on this the first time I tried it. (The TOP of the pie should be 5" from the broiler, not the rack) But it still disappeared! I've since baked it to perfection and several people have asked for the recipe!

Caramels
Wow! Soooo good! This is my first attempt at caramel, so I followed others advice and calibrated my thermometer. It was way off! I basically used it as a general guide and kept doing the water test until it was the consistency I liked. I boiled it roughly 20-25 minutes. Well worth the time. I can't wait to share (what's left of) these with my family for Christmas!

Double Chocolate Chip Macadamia Cookies
These cookies were gone in no time! I substituted coconut extract for the vanilla and they were very tastey! Next time I will probably use a little less chocolate chips, there was a lot of stuff and not much cookie. Still very delicious though!
