Oatmeal Raisin Cookies IV

This is my go-to oatmeal cookie recipe. There is a lot of sugar in the recipe so I'll usually sub-white sugar for fine natural cane sugar. I always soak the raisins and leave them in the fridge for a few hours - same amount I'd leave out the butter to soften. And then I make the dough, roll it up into 3" diameter logs in saran wrap, and bake later on. I think the cold dough makes the cookies super soft.

Brown Sugar Banana Nut Bread I

Very good - I didn't have any brown sugar for my "brown sugar banana bread". So I cut the sugar in half and added 1 tbsp of maple syrup and one package of apple cinnamon instant oatmeal. It came out great - super hearty! But it does need more than an hour to bake like... 90 minutes?

French Butter Cakes (Madeleines)

Good - easy, but a little "eggy". Will try again with medium sized eggs. Also did a batch of Green Tea Madeleines - cut the lemon zest to 1 tsp and sifted 1 tsp of maccha into flour.

Tomato Chicken Parmesan

It was realy good considering how little work it took. I didn't even bothering cooking the chicken in the pan.. just marinated the chicken over night in italian dressing the just breaded them and baked them!

The Best Rolled Sugar Cookies

The cookies are great with some simple frosting. Don't try to taste it straight from the oven - give it time to COMPLETELY cool.
