Tangy Bean Soup
Quick, easy, and very comforting. Perfect for a January day. I added frozen tortellini to it 30 minutes before it was done and it added that little extra that made it truly comfort food. I didn't make the dumplings, already had cornbread on hand.

Asian Beef with Snow Peas
This wins in all categories! It's very tasty and simple to make. I have two small children so I need easy, flavorful meals to make and this one is a keeper. I changed nothing and served it over brown rice. We inhaled the leftovers so I'll have to make it again very soon. Might try different veggies next time to mix it up.

BBQ Pie
I thought this recipe was lacking something, like more veggies. Next time I think I'll put in a layer of broccoli or peas and carrots. It would be more shepherd's pie like which is fine with me. My husband really likes it, of course he's not as veggie crazy as myself.
