Southwest Chicken

This was EXCELLENT!! I used 2 14oz cans of the local brand diced tomatoes with chilis and added some extra corn (I used frozen) I had used chicken cutlets in this recipe as well since thats what I had. Once served I squeezed fresh lime onto our servings and we added our own hot sauce and jalapenos as we liked. We ate up the extra "salsa" with blue chips.

Avocado Mango Salsa

This was very good. I used jalapeno peppers minced as I did not have habanero. I used the salsa on salmon burgers I had made for supper. Will definately be making this again.

Broken Thermostat Curry

This was really good and easy to make. I did mine in the slow cooker and had it on low for the day. The only thing I would advise if doing in slow cooker is cut back on the water a little bit. I liked how it came out, but was informed that while the taste was right on, it was a little soupy for how the dish is supposed to be. The flavours were wonderful. I had to buy a few of the spices since I have never made indian quisine before and have never used them. Definately worth the small investment.

Black Bean and Corn Quesadillas

I thought this was really yummy. I read the reviews and left the brown sugar in the recipe, maybe used a tad less than 1 Tbs. I thought it added a nice touch. I added cumin. Instead of using salsa, I used fresh chopped tomatoes that I put on top of the warm mixture in the quesadillas along with some chopped green onions. I will definately be making this again. Its a great meatless dish, but I may try it with chicken some time down the road.

BUSH'S® Caribbean One-Pot Stew

This recipe is fantastic and Im making it again tonight. I made minor variations to it and we love how it came out. I made the broth from a bouillion cube and I used 2 10oz cans of Rotel Mexican Lime and Cilantro Diced Tomatoes. I put everything in my slow cooker on low for the day. I think the sweet potatoes helped thicken it a little as well. This was one of those dishes that we just kept says mmmmmm with every bite and kept commenting on how good it is.

Asian Lettuce Wraps

I have made this 3 times now. This first time I made as the recipe states, the next two times I made with ground turkey. So far we love the ground turkey. I add a little more Soy and Hoisin sauce for our preferences. I also add the pickled ginger as a topping on my wrap. This is one of our favorite dishes to eat. We also LOVE the Avacado Taco recipe from this site.

Black Bean Avocado Salad

This ws really good. We served it over baby spinach for supper, then left overs today put in a pita. The flavors were wonderful. Wil definately make this again, maybe play with the seasonings a little. The cumin goes nicely with the black beans.

Ratatouille

This was really good. I didnt add the eggplant because I didnt have any, dont know if I would. I did add yellow squash and some red pepper to the mix. I didnt layer, I just prepared on stove and then baked it. It was really very good. I had used a can of seasoned diced tomatoes as well.

Black Beans and Rice

This is really yummy! I have made this twice now, definately add a nice amount of cumin. Also, if you like to kick it up a notch, sprinkle on the hot sauce once its on your plate. That takes the dish to a whole new level! I fixed with tortillas the first time and the second time without. I think I like it better without and I made some asparagus with garlic and onion to go on the side.

Vegetarian Stuffed Peppers

This was really yummy! I baked the green peppers face down for about 25 min before stuffing them and putting them back in. I also added cumin to the mixture. I did not use the sherry, I didnt have any and wasnt going to buy some since I never use it. I did add the chopped pecans which were really good, I was going to add some raisens but SOMEBODY ate them so I didn't have any left. :) Overall very good and will definately make this again. Its also really good reheated as left overs.

Barbeque Tempeh Sandwiches

This is a great alternative to using meat. I never had tempeh before and like another reviewer I purchased the organic 3 grain. You can use whatever your favorite BBQ sauce is. I sauteed green pepper, red pepper, onion, and chopped carrot. I served this with baked sweet potato chips. Will definately make this again.

Double Chili Cheese Dip

I have been making this for years. It is a standard at all get togethers. I have gone to using light cream cheese (can't tell the difference at all!) and I usually use a taco or tex mex blend for the cheese on top. I have played around with the types of chili. The standard beans in hot sauce is always good but I like to use Stagg chili with the bits of steak in it. There is NEVER any left over! YUM!!

Slow Cooker Beef Vegetable Soup

This was great! I modified this a little. I always brown the meat a little before putting it in the slow cooker, you don't need to but I like it that way. I used two bags frozen veggies, one mixed veggies and the other the seasoned veggies with potatoes. I used the 28 oz can of diced tomatoes and I either have added a little more water or I have used beef or vegetable broth. I have also cut up some celery if I had it on hand when I was making it. I have made this many times since I found this recipe. Thanks for sharing!

Winter Vegetable Hash

This was really delicious. Like some of the other reviewers I used sweet potatoes instead of white. I used fresh baby spinach instead of kale sine that is what we like and I had on hand. At the end I did take someone elses advice and added a little Worcestershire sauce and a little balsamic vinegar. I have made it twice so far, and it is deffinately a keeper!

Avocado Tacos

I thought this was excellent! I followed the recipes as stated, and added about 1/4 to 1/2 of a freshly squeezed lime to the avacado mixture. I also had some baby spinach on the side to put on the taco as well. What I am going to try next time is add some corn to the mixture and maybe some red pepper. I was really surprised at how filling this was.

Chilled Salmon With Summer Tomato Salsa

The salsa is excellant! I did serve my salmon warm with a squeeze of lime on it. The salsa can be made earlier in the day making supper time a breeze. Plus, the flavors have had a chance to meld. The presentation is very impressive.

Chicken and Red Wine Sauce

Very nice flavor. I didn't have the paprika but I did sprinkle on some Italian seasoning and a little garlic salt. I did cut back some on the brown sugar and it was good. I like brown sugar in meals but find that many recipes seem to call for too much of it, making it a little too sweet. I served with couscous and drizzled some of the sauce on it.
