Chile Relleno Casserole

If your looking for something with a little spice to it, you'll need to add more chilies or even chopped jalapenos. I add more green chilies, onion and garlic so that the kids will eat it then my husband and me top it off with hot salsa.

Jay's Hearty Breakfast Skillet

Very Yummy!! This is simple and tastes great. If you love a big hearty breakfast then this is it. I'm not really a breakfast person,so I do prefer it as an evening meal. But I do make this for the family on weekends. I prefer to make breakfast tacos out of the mixture. Mix some scrabbled eggs into the skillet, place in warm tortillas and add some salsa. Better the the Jimmy Dean's frozen in the bag.

Almond Chicken Casserole II

I made this recipe as written except I added fresh mushrooms, used sour cream in place of the mayo and used Honey Bunches of Oats with almonds as suggested by other reviewers. The casserole was fast and easy to prepare. Would recommend using the cornflakes,the Honey Bunches of Oats were to sweet for us. The casserole does need seasoning, as written it's quite bland.

Cake Mix Cookies I

These are very easy to make when your in a rush. I chose a strawberry cake mix since I was making them for a Valentines's party.I also chopped up some Hershey's Hugs, the Raspberry White Creme ones and added them. It's a pink cookies with little pieces of white chocolate and milk chocolate in it.The strawberry cake mix is very artificial tasting, I would not recommend using it. It's not the recipes fault,it's my poor judgement. Choose a flavor you know you'll like. They also seemed very oily when making, but they up baked fine. I'm going to reduce the oil to 1/4 cup in my batch of chocolate and see how they turn out.

Honey Roasted Red Potatoes

I Love these potatoes!! Granted I did not make them as directed, but I know that they are great. I used what I had on hand. I used fingerling potatoes cut into bite size pieces along with the onion. I just cut pats of butter and placed on top. Added honey, salt, pepper, garlic powder and a pinch or two of red pepper flakes. Roasted in oven, stirring every 15 minutes or so,until done. I like mine well roasted. I will try recipe as written I just didn't have any dry mustard on hand. Thanks for sharing this recipe.

Buttery Cooked Carrots

Quick, easy and tasty. I cut up regular carrots. Steamed them as recommended by others. Added butter, brown sugar and salt to taste. I like the salt/ sweet combination. Family all like them. Will make again.

Fried Cabbage II

Easy recipe! Everyone loved it. The kids have even requested this a few times. I've made fried cabbage for years, but never added the splash of vinager. Do add it, It really does add to the flavor.

Chuck's Favorite Mac and Cheese

This was awesome!!I made as written except I used butter crackers for the topping. We love topping on our mac and cheese. As my kids say "It makes it more special". Next time I make this I'm going to take this advise of another and add some ham and our favorite vegetables. It will then become a one dish meal and I will LOVE that!!

Refried Beans Without the Refry

These were great! Made as written except I added 1 whole pepper with seeds and reduced the salt to 3 teaspoons as recommended by others. I cooked these on the stove for about 3 hours. After mashing and tasting, I had to add salt.I think the 5 teaspoons would have been right for us. I use coarse Kosher salt and that might make a difference. The beans made some wonderful tostadas for my husbands birthday. This is how I will make my beans from now on! Thanks for a great recipe.

Deb's Millionaire Cake

I made this recipe as written except I added a little vanilla extract to the cake mix. I always do this,I think it makes the box mixes taste better. And I have to give this a "5 star" rating. It may not be the fanciest cake ever. But it taste really good. It's very easy to make and you probably already have the ingredients on hand. Do make the holes plenty big and make sure the cake is right out of the oven when you put the chocolate mixture on. I just kept going over the cake with the spatula and the filling was pushed into the holes. I baked the cake in a glass pan so I could check it at the bottom. The semi-sweet chocolate is very rich. If you're not a chocolate lover, you may prefer to use milk chocolate chips. Please try.

Chicken and Garlic Stew

This dish is edible, but I did not like it at all. For a recipe that should have so much flavor, it lacks a lot! I thought the recipe would have more of a roasted garlic taste.But mine was a bitter, pungent garlic taste. We are garlic lover's, that's why I tried the recipe. But this is not what I had hoped it would be. As far as appearance, I would not serve this to company! It took some coaching even to get my kids to try it. They said it was okay, but "Don't make this again."

Enchilada Sauce

I'm not a big fan of enchildas, but this recipe has unique flavor. Tastes like a combination of enchilda and a hint of mole sauce together. It works, we thought it was great. I've used it on beef enchildas and cheese,onion and jalapeno enchildas. Can't wait to try it out on the in-laws (who are hispanic).Thank you so much for this easy, AWESOME recipe.

Blackberry Cobbler

This turned out awful! Not what I was looking for at all. The texture was chewy and rubbery. Will not make again. Recipe wasn't a total loss. I pulled off the top part of the cobbler(mostly berries),heated it up and served with vanilla ice cream.

Vanilla Ice Cream IV

We thought this recipe was excellent. I did use half and half for the heavy whipping cream(that's what I happened to have on hand.) I also cooked the milk and eggs and would recommend doing so. I actually made two batches of ice cream. In the second one we used mexican chocolate and a little brandy. It was really good!!! For those who think the recipe has an artifical taste, add your favorite ingredients and I'm sure it won't be noticed. This is very easy and a good basic recipe. Thanks, Lisa!

Mexican Baked Fish

I thought this was very good.I don't like fish that tastes like fish, so this works great for my family. Actually made this several times during lent and twice for company. They loved it also. My mother-in-law even asked for the recipe and made it for the rest of the family. Great recipe to add fish to ones diet and reduce the red meat. Thanks Christine

Hot Cocoa Mix in a Jar

I also used the vanilla creamer and I thought this turned out good. My kids seemed to like it, so I put it in the teachers gift baskets for Christmas. Hope they enjoyed it. It's very easy to make, try it!
