Pumpkin Bundt Cake

so, so good. I followed the recipe exactly except for using sugar-free pudding instead of regular and sugaring my pan (I know, it seems counter-intuitive, but hey, save your calories where you can, lol) like another member suggested. Really, I can't say enough... I'll never make a different pumpkin cake!

Thai Ginger Soup

Mmm... I doubled the recipe, omitted the chicken breast and used a bag of Trader Joe's Chicken Potstickers instead and added 2 tbsp of red curry paste because my hubby and I like some heat. Sooo tasty!

Zucchini Bread IV

Oh my goodness... Sooo good. Only changes I did was to substitute half the sugar for splenda and half the oil for plain yogurt. Also, I baked in muffin tins (the recipe made 2 dozen) for 22-23 minutes. Dense, sweet... yum!!! I've made 2 batches already! Perfect with my coffee for an easy breakfast on the go.

Strawberry Pretzel Salad

Fantastic recipe! I always substitute sugar free jello/cool whip and use splenda or sweet-n-low for the sugar. Strawberries are great, but so are peaches (with peach jello!)... Yum! Also, I find it helpful to refrigerate after each step, that way it doesn't all mix into one mushy mess!

Taco Soup I

Really good starting point! I use ground turkey (or leftover chicken breast if I have it), beef broth (or chicken) instead of the water, black beans instead of the kidney and add 1/2 a bag of frozen white corn. Really easy and REALLY delish!!!

Whipped Shortbread Cookies

Mmmm! Instead of cherries, I placed a 1/2 teaspoon of Mamool (middle-eastern date cookie) filling in the center of these and then dusted them with powdered sugar. Sooo good!
