About this Cook
I am 40 and have been cooking for about 20 years. Over the years, my skills have greatly improved. Each new meal is still a learning experience, though. A couple of things about my cooking style: 1) I rarely measure ingredients. It's not too difficult to eyeball most measurements in the palm of your hand. Which is why I DONT... 2)...bake! Especially candy making. Both require precise measurements, and that leaves little room for personal flair. I get bored simply following directions. 3) I like to try all sorts of recipes. I use most recipes as guidelines, but nothing set in stone. The SECOND time I make a dish is when it gets fun; adding or subtracting ingredients to my taste. 4) I taste everything as I am cooking. (If company is around, I just don't let them see me dipping into the soup as it simmers!) Aside from cooking, I also enjoy writing and grammar. It's very frustrating that I can't use paragraphs in my profile!
My favorite things to cook
I think I am best at cooking asian fooods. I adore Tam Yum Gai (lemongrasss soup) and other Thai dishes. I even grow lemongrasss in my garden. But anything stir-fried is good. And soups! I LOVE soups. Any type. I make a killer Franch Onion and an awesome Hot Sour soup.
My favorite family cooking traditions
I'm a guy...I like to grill. No real traditions: my grandmother did a lot of fabulous baking, but as you have learned, I hate baking.
My cooking triumphs
My best dishes that always receive raves: Tom Yam Gai, Tom Kai Gai, Hot Sour Soup, Scechuan Chicken, and anything with shrimp.
My cooking tragedies
No tragedies, but some I've tried recipes that didn't always work.

Garden Fresh Tomato Soup
I always get a kick out of the reviews that change a recipe so much that it is no longer anything near the original! Look, the whole point of this recipe is that it is uncomplicated. There are plenty of really good fancy-sassy tomato soup recipes to try, if that's what you want. But this soup sticks to a great principle: simple recipes are often the best. And the result is what tomato soup should taste like. Few additives and fresh, ripe tomatoes. Real tomato flavor. Don't change a thing and you will be rewarded.

Gerry's Chicken Enchiladas
I've been making this recipe for a long time now. I absolutely love it. However, you can DEFINITELY simplify it to where it really isn't a chore at all, if you don't mind chopped chicken rather than shredded: 1) dice the chicken 2)saute the chicken in a large skillet 3) dump in all the remaining ingredients and simmer until it is reduced and not too watery. Leave out the broth. 4) build your enchiladas and cook! It tastes just the same as the long method and is super easy!

French Dip Sandwiches
Don't go any further if you are looking for a French Dip! This recipe is perfect. Do NOT change a thing to this recipe. If you follow it, you will be rewarded with an awesome sandwich. I have made this countless times and it needs no adjustments. It's fun to make when entertaining: great casual meal with almost no fuss. Serve with french fries!
