I have been blessed with a truly wonderful mother in law. She has taken the time and interest to show me how to be a better mom and a cook (don't get me wrong I absolutely love my own mother but she is not the best cook). My husbands favorite breakfast is Munukakuwa (oven pancake). It's finnish and it was hard for me to master. So the day that I actually pulled my pancake out of the oven and it was light and fluffy was a great triumph for me.
My cooking tragedies
Making munukakuwa is actually a tragedy for me also. It use to be very chunky instead of light and fluffy. I would also burn it a lot. My other tragedy is pasties. And it still is hard to master. I just recently learned that you don't cook the meat ahead of time. So at least I am on my way to mastering this. Now if I can only master the dough.

Beer Batter Fish Made Great
YUMMY! I love this recipe for many reasons but mostly because the batter stuck to the fish.

Baked Potato Skins
VERY GOOD! Plan on emailing everyone this recipe. I actually think these are better than Friday's potato skins.

Yummy Sweet Potato Casserole
I wish people would not give lower ratings because of the way they feel recipes should taste like. This recipe turned out perfectly. Yes, it might be too sweet for some people but that is the way the recipe is designed. I like sweet food so this is a GREAT recipe. My kids even devoured it. I would not change a thing. Thank you for a great recipe.
