Ok so I made my change to it to cut out the fat and cut down on the calories...these were delicious! I just took a can of corn, measured out 1/2 C and put in my food processor; processed until it was fairly smooth (adding water from can as needed). Just replaced the butter with the pureed corn and used whole wheat flour instead of white flour, used 1 egg instead of 2. I also added the rest of the can at the end and folded in. I made in cupcake tins. Each muffin is only 140 calories (12 muffins), 1.5g fat, and 2.33g fiber, 4g protein, .5g sat fat.
