Spinach Dip with Water Chestnuts

Heavenly 'Apple of My Thigh' Dessert

OH. MY. GOODNESS !! Delicious, and so easy! I used Smuckers hot caramel topping (that's the name - I didn't heat the topping). I made it last night for our Christmas Party and the women in particular went crazy over it! You can go ahead and slice the apples ahead of time...just remember to either dip them in Sprite or keep the slices in cold water with lemon juice added until time to serve.

Pumpkin Crunch Cake

Yum! I modified the recipe a bit...used only three eggs and about 3/4 of the cake mix. I found that it only took about one hour to bake. For the topping, I went all out and used 8 oz of cream cheese (softened), a cup of heavy whipping cream, 1/2 c confectioners sugar and about 4 oz of Cool Whip. Just beat the cream cheese and cream until it starts to thicken, then add the sugar and Cool Whip gradually.

Awesome Sausage, Apple and Cranberry Stuffing

Yum! I used packaged Pepperidge Farms bread cubes, a Braeburn apple, and one lb. of sage pork sausage. The presentation was awesome, and the flavor combination was great! My only problem was knowing how much stock to use.....my first batch was a little dry, but the second one was perfect. Will definitely make this again!

Pasta with Asparagus

I made this for the first time a while ago, and was not impressed. Since that time, I've modified the recipe and find it much tastier. I add 1-2 cloves of garlic when sauteing the asparagus, and usually use twice the broth called for. I also throw in a bit of rosemary, thyme and basil when adding the mushrooms. Great on whole-wheat pasta!

This was quite a bit of trouble for a very average and bland meal. We found ourselves adding extra soy sauce to give it some flavor. I probably won't try this again.

Lima Bean Pasta

Different and pretty good. Four stars with five-star potential with some tweaking. I followed the recipe except I used frozen lima beans (after cooking them about halfway). With a little more olive oil and a little more garlic, this will definitely be a keeper!

Bacon Wrapped Bratwurst

10 stars, minimum! After making these several times, I've found that two beers are plenty - why waste beer?!! :) I've had good luck using center cut bacon...the strips aren't as wide and they fit perfectly on the individual pieces. It's easier and quicker to mix the brown sugar and cayenne in a medium-sized container with lid, throw in several of the assembled pieces and give the container a few good shakes. I cover a broiler plan in foil, put slits in the foil in several places to allow the grease to drain AND spray the foil with Pam.

Byrdhouse Spicy Chicken and Peaches

Surprisingly good! I did make a few changes: used fresh peaches because I had them, omitted the flour and cooked the chicken in a little olive oil, and used some cornstarch to thicken the sauce a bit in the last few minutes of cooking. Great served over brown rice!

Key West Chicken

I followed the recipe exactly and marinated the chicken overnight. It was very good, but I'll probably add a little more soy sauce and garlic next time. If marinated only 30 minutes, I think it would be very bland. And if you want any leftover marinade to cook and serve with the chicken, you probably should double the recipe.

Asian Chicken Salad

Very, very good. I'll probably cut the sesame oil in 1/2 next time, it ws just a bit overpowering. I shredded the meat from a rotisserie chicken from the store, which made it quick and easy!

Rosemary Ranch Chicken Kabobs

Yum!!! Didn't do the kabobs, just marinated chicken breasts for about an hour. I did use light ranch, and don't think regular ranch would be any better. I cut the salt in half based on other recommendations. Thanks for sharing this one!

Garlic Mashed Red Potatoes

Excellent and easy! I used a mixer, but mostly just used the beaters to mash the potatoes...we prefer a more substantial texture. Be sure to warm the milk; it's essential for fluffy potatoes.

Marinade for Chicken

Fantastic! I used olive oil in place of the vegetable oil and lite soy sauce. Otherwise, I followed the recipe exactly. 1/4 of the recipe is the perfect amount for 1 lb. of boneless breasts.
