Hot and Sour Chinese Eggplant

Good sauce, not GREAT, but easy. I doubt it's very authentic...??? (Not exactly Asian ingreds.) Very salty. However, still relatively healthy and a quick/easy way to do up eggplant. We will use the sauce idea in other stirfries, probably.

Pumpkin Turkey Chili

Good on its own - great with the sour cream or, as we did, yogurt, and cheese stirred in at table. Mind you, I made some changes: 29 ounce can diced toms, with water; no turkey; instead, added 19-ounce can kidney beans, drained and rinsed, to suit my fam's chili expectations...turned out great!

Pumpkin Oatmeal

Easy Cinnamon Fudge

Doesn't set perfectly (a bit softer than typical fudge), but otherwise great flavour, the cinnamon is yum, matches walnuts well. Might try reducing the milk a titch to have it set better...? Using it for gifts this Christmas, I made a double batch in a 9x13 pan!

Gingerbread Biscotti

Great flavour that lasts, unlike cakey moist gingerbread recipes...and this is key when doing holiday baking weeks in advance!! They pass the test, these will be going in mailers and gifts to family and friends :-) I followed the recipe exactly, lining sheets with parchment instead of greasing.

Best Big, Fat, Chewy Chocolate Chip Cookie

Yum! Followed exactly. I finally have a chocolate chip recipe after trying many others, and lo and behold it is an EASY one, too. I used 2 eggs, not 1 + 1 yolk, and reduced the butter a TITCH. 1 cup c chips and 1 cup blanched unsalted peanuts (if you use salted, omit salt in the dough and use unsalted butter). A hit at the party I went to last night. Re: cakey - the bottom is very chewy and good texture, top was a titch cakey. Maybe add more baking soda...?? Or use BP instead.

Apple Cider Biscuits

Great taste and decent texture. I forgot the cinnamon sprinkle topping. Smart to use the "dregs" of the cider container for this, as they are often too strong/gritty to drink, but work well distributed throughout the biscuits. Just the right amount of butter! Fairness: I left out the baking powder, and they were still edible so that says something...I know how biscuits work so the 4 stars is based on if they had risen!

Black Magic Cake

Good basic chocolate cake. Made no changes. This will be a go-to "easy" chocolate cake recipe but you do get a better cake fr recipes that involve more steps/additions etc. for airiness.

Lentil Soup

Yummy, can use a bit more spice though. If you use SPLIT lentils, it takes about 30 minutes, 40 start-finish. No modifications req'd except to up spices; I added bell peppers, don't do that except when you add the spinach, if you add them early like I did they just become soggy mush.

Fabulous Homemade Bread

Light, airy, rose nicely. Made 1/3 recipe in 2 9x5" loaf pans (using Allrecipes scale feature, scaled to 24 servings, used those measurements). I might add more whole wheat plus a bit extra water, as I prefer heartier breads, but this worked out just fine.

Blackberry Pie I

Very good for a pie that sets quickly. You can eat it almost right out of the oven. And it is good warm. I hope it will be good cold tomorrow morning, too (pie for breakfast!). Followed recipe. You do get clumps of flour/sugar a bit (because the berries are so big?). That might be better w wild berries. If you have time overnight to let it set, make another recipe w less flour for pure berry flavour.

Orzo with Kale

It tastes like kale, lol but be ready for the slightly bitter, spinach-like taste. Great texture. Do add tomatoes after cooking, or some tofu, or some veggie sausage, or beans...for protein. Just stir them in the bowl at the end. Very good for you no doubt and a good balance of flavours. Might try rice in place of orzo. No modifications req'd!

Chocolate Chip Orange Zucchini Bread

Good, but not "wow". Very orangey, I might cut back on the zest. It makes it taste...not like zucchini...which isn't why I make zucchini bread. Left out walnuts, upped chocolate chips accordingly. Very moist. Reduced the oil.

Zucchini Bread III

Yummy! It didn't knock me off my feet or anything, but moderately healthy and very delicious. Reduced the oil slightly. I could see subbing bananas or apple sauce. Used cashews and dried sweet cherries. Added 1 cup extra zucchini. Made two good-size loaves, done in 50 minutes, and you'd never guess the whole wheat if you're a ww hater :-)

Peach Shortcake

Made JUST the biscuits. A hit! Followed ingredients exactly, but shaped into 4 biscuits, baked about 20-25 mins, used oven's "keep warm" setting after that for quite a while. Split warm biscuits and topped with vanilla yogurt, raspberries and wild blueberries. A hit!

Yummy. I used 1/2 ww and 1/2 ap flours; pumpkin pie spice; added extra sugar to offset ww flour, and a bit of maple syrup right into the batter. Good result but a bit dense.

Banana Oatmeal Cookies I

Yummy! Followed the recipe but PB chips instead of choc. ones, added maybe 1/2 cup pumpkin seeds, and 1/2 whole wheat 1/2 AP flour. They came out quite cakey, like muffin tops, this way.

Sugared Rhubarb Muffins

Used brown sugar for topping instead of white and about 1/2 cup less flour, 1/2 cup rolled (quick) oats added in. Yummy and very light/airy tasting! A keeper.

Pesto Polenta Lasagna

Delicious and simple, if not particularly healthy. Once it finished cooking, I tilted the pan as much to one side as I could without the contents sliding (glass Pyrex dish of prescribed size) and then used a paper towel to sop up the oil from the one side it had all poured towards. Probably tells you something about store-bought vs. fresh pesto, amounts of oil in them?!?! Might try just pulsing basil & garlic in a blender instead, with a titch of oil...it's cheaper that way, too. Did the baking-polenta-5-mins-each-side trick, too. Good texture. My sauce had mushrooms, fresh basil and garlic in it.

Ono Butter Mochi

Delish. Very heavy. Stayed soft due to the butter, unlike "traditional" mochi. Might try sprinkling almonds on top or using almond extract. Give it a go if you like coconut and the chewy texture of some Asian desserts.
