Grilled Pheasant Poppers

We ate these as kabobs for the main meal so I diluted the jalapeno juice with water because I was afraid they would be too hot. But, they weren't hot at all. Next time I will use the full jalapeno juice. My son, who totally refused to eat pheasant, agreed to try one after seeing them come off the grill and loved them. He even "shotgunned" the leftovers for the next day. I can't wait to try these again.

Gourmet Caramel Apples

Great recipe. I am sure I will use it again and again. Very, very sweet but yummy! I was only able to get 6 "small" apples with the caramel and I used a 12 oz bag of milk chocolate chips. I did drop the apples in hot water for only a second and you could see the wax so I would recommend this step. The only problem I had was dipping it in the chocolate. With the apples being chilled after the caramel step the chocolate wanted to set up too fast. I had to use a knife to help spread it. But after drizzling it with orange colored white chocolate you couldn't see any flaws. They looked awesome!!

Cinnamon Popcorn II

5 star all the way! Cinnamon popcorn is my favorite flavor of popcorn and I always thought that I could probably make it myself. Well, now I can. This recipe was perfect. However, taking the advice of others I used only half the butter and I did spread it out on a baking sheet and baked for 1 hour at 200, stirring every 15 minutes. (My caramel corn recipe bakes it this way) It came out crunchy and very flavorful. I also doubled the recipe because I was so excited to try it and I am so glad that I did. Thanks!

White Chocolate Raspberry Cheesecake

I am writing this a little premature because I haven't yet tasted it. I made this for a party tonight and the looks alone are wonderful. I did bake it in a water bath, baked for 70 minutes (too giggly after 60) and then let it cool for a few minutes in the oven after turning it off. When I checked on it, it was a little brown. Hopefully not overcooked. So...would not recommend cooking as long if you leave in the oven to cool. Even a little brown this is the best looking cheesecake. I should have made two because I may not be able to wait till tonight.

Cherry Chicken Lettuce Wraps

Tried this recipe on my family who have never had lettuce wraps and they loved them. I will definetly make again but to be honest, they were not as good as PF Changs. It smelt wonderful while cooking but the flavor was too mild for me. Needs something extra. Overall still good!!!

Sorry, but we did not care for this. My 9 year old son said it had a funny taste and would not finish his. My husband and I thought it tasted like canned chili (we used Wolf Brand). I don't know why this was rated so high.

Make-Ahead Mashed Potatoes

Made these at Thanksgiving and my children are asking for them for Christmas. Making them ahead of time is a great convenience especially if you are traveling out of town as we did. I did use garlic salt as suggested by others and I topped with cheese.

Beef Stroganoff III

Awesome!!! Even my picky children loved this recipe. It is so easy to prepare and turns out great. I serve it over wide egg noodles. I did not add the wine because I didn't have any on hand and I could not find "condensed" beef broth so I used Campbell's Beef Consomme.

Mocha Coffee Mix

Looking for a mix that my teenage daughter could give to friends as a gift for Christmas. This was Perfect!! It has a mild chocolate flavor with a hint of coffee. Very smooth for the young. I would prefer a little more coffee but she loved it as is.

Gingerbread Boys

I am not that fond of gingerbread cookies but my son insisted that we make some. I searched for a good recipe and thought this one sounded good, so we tried it. It was wonderful!! I could have just eaten the dough. But...I did bake them up and every night my two kids decorate one to eat. However, I prefer my cookies a little chewy so I baked them for only 8 minutes (for a 3"x4" man). Give it a try. You'll love the orange zest in them!
