French Toast Casserole

Excellent dish. I substituted 1/2 c eggnog for some of the milk and made it for Christmas brunch. It was easy, delicious and looked beautiful as it came out of the oven all puffed up and golden. I cooked it in a cast iron skillet.

Italian Breaded Pork Chops

If you use boneless pork chops and pound them thin, you don't need to bake them, and they come out fork tender. I used some garlic salt instead of the garlic cloves. Excellent recipe.

Angie's Dad's Best Cabbage Coleslaw

I substituted Splenda for the sugar without any problem. I also decreased the oil a little bit this time to save some calories. Everyone in my family loves this recipe, even though they hate mayonnaise based coleslaw.

Corn and Crab Cakes

I was very disappointed. I ended up adding A LOT of breadcrumbs and the patties still didn't hold together well. Plus they were not very flavorful. I may try again and add an egg, cracker crumbs, more seasoning of some type.

Famous Pork Chops

Easy and delicious, what could be better? I used thin cut boneless chopped, which were done in about 30 min. I did not cover with foil and they were nicely browned but not dry at all. My husband is not a fan of pork but he liked these a lot.

Feta Tomato-Basil Fish

I seeded a large, fresh tomato & used extra garlic. I put some of the mixture on the fish, reserved the rest to toss with spaghetti for a side dish. Also, used Romano instead of Feta. Delicious.

Chicken Pot Pie IX

I followed the recipe (except I didn't measure anything) and it turned out excellent. I cooked the chicken breast in chicken broth, then cut them up into smaller pieces. I made homemade pie crust since I had everything else on hand and didn't want to go to the store. Family loved this recipe.

Southern Peach Cobbler

This should be called Heaven in a Bowl or something like that. The only thing I did differently was I didn't sprinkle cinnamon on top. It could have used a bit more cornstarch, was a little runny, otherwise absolutely perfect.

Yellow Squash Casserole

This was great. I used my food processor to make prep quick: grated the cheese, chopped the crackers (be careful not to pulverize), sliced the squash & onion, mixed the egg & seasoning. Also, to cut down on dirty dishes, I put the squash, onion & butter in a covered casserole in the microwave for 10 min, then added the other ingredients. I added seasoned salt and a tsp of hot sauce. It wasn't spicy, just a hint of pepper flavor. Yum.

Lentil Soup with Lemon

Very good, very easy. I'm not big on cumin, but it was good in this. I forgot to put the cilantro in, didn't miss it. The olive oil and freshly squeezed lemon juice really perked up the flavor nicely.

Blissful Rosemary Chicken

I am usually a pretty good cook, but struck out with this. The cheese oozed out, making the sauce a gloppy mess. The rosemary flavor was overwhelming to me. This was not worth the expense of the prosciutto and Fontina, nor the bother of pounding and rolling the chicken.

Black Bean And Corn Salad II

I've made this several times for home and to take to potlucks at work. Everyone loves it. I add a finely chopped jalapeno or two and more cilantro. Good served with baked Tostitos-like a dip. I calculated it on Weight Watchers and came up with 3 points per serving. Lots of fiber.

Strawberry Spinach Salad I

I substituted Splenda for the sugar. This is an excellent dish that is quick to prepare. I brought the ingredients to work, with the dressing in a bottle. Assembled it for lunch and everyone loved it.
