Gianna's Kettle Corn

I'm so excited, it's possible I'm still on a sugar high from the 2 batches of kettle corn I just ate! I made some for movie night for my family, and we loved it so much I made three batches for a pre-fourth of July party. Everyone LOVED it and asked for the recipe. I felt guilty eating it, but was reassured with the fiber content in the corn itself. I liked how crispy and crunchy it was. And the pieces were easy to break apart when a few did stick. I also liked how every piece was covered with the sugar mixture. I did add the 1/4 teaspoon salt in with the sugar during cooking. I used a large cast iron pot. I have an electric stove and shook and swirled the entire time, removing pot from heat occasionally. I didn't burn any and it was my first time ever making popcorn. It was way way better than any overpriced bag at a farmer's market. I too splurged on the more expensive Orville Red. popcorn. Thanks Sue, I will bring this tasty snack to ALL my summer pool parties.***I just made this again, except this time with brown sugar, hoping for caramel corn. I was disappointed, the sugar just didn't cook the same, but the kids still ate it. Still, I won't make it that way again.

Cosmo-Style Pomegranate Martini

Amazing. Didn't change a thing. It is the first martini I've ever made. I've made them 3 times in 2 weeks.I know, I know, 3 times? I feel like it's good for me with the pom juice! I add a sugar rim. I always love a sugar rim, but that's just my preference. It's not too sweet or too strong, and it goes down pretty easy, so be cautious. It's a beautiful color and would be great at Christmas or Valentines Day.

Shredded Beef for Tacos

Easy and delicious! I did use the frozen rump and it cooked perfectly. There was almost no fat, and it was one of the cheaper cuts of beef I saw at the store. I shredded it after nine hours and then let it simmer for about another hour. I too used a whole bottle of CORONA. My kids (11 and 6) loved it too! This will be a new regular in our house. You can use the meat for tacos, burritos, tostadas, the possibilities seem endless.

Pepperoncini Beef

Loved it. I served it with pasta salad on the side for opening day game night! (It must have been lucky because we won!)I sprinkled the roast with salt, pepper and italian seasoning and then followed the directions exactly. It was perfect. My little ones thought it was a bit spicy, so I may substitute some of the peppercini liquid with water or broth next time if kids are eating it. Although they still gobbled it all up! Thanks so much for this new recipe, I know we will use it often.

Best Chicken Pasta Salad

Very Disappointing is all I can say without being too rude. I will NEVER make this again. I followed the recipe except I substituted red onion for the vadalia because that is what my grocer had and I don't suggest trying that!! Maybe that was the problem, but I highly doubt it. I should have followed the others advice for changes to the recipe.

A Good Easy Garlic Chicken

Very good and so easy. I liked that I only had to use ingredients I had on hand. I Followed advice of another and used fresh chopped onion and garlic instead of powdered. I sauteed chicken until browned on both sides, then I added a 8.4 oz. box of low sodium chicken broth. I covered it and let cook over medium heat until chicken was done. This made the chicken very moist and tender. Then I removed chicken from the pan. I added about 1 TBL. of corn starch mixed with about 1-1 1/2 c. cold water to the remaining butter and onion in the pan. I cooked this whisking the entire time until thick and bubbly. This made an excellent sauce to pour over the chicken. I served it with parmesan egg noodles on the side, but it would also be good with the chicken and sauce served over plain egg noodles or mashed potatoes.

Artichoke Spinach Lasagna

This was so good. I used no boil lasagna noodles and left the artichokes whole and added the juice as well. I also used one bag of fresh prewashed spinach instead of frozen.And I added some ricotta when I layered. I've made it several times, it's a keeper.

Shrimp with Tomatoes and Feta Cheese

This was quick and easy and sooo good. I loved the sauce. I served it over angel hair pasta. However, this was my first time cooking shrimp and it didn't turn out very tender. I think I either over cooked it or under cooked it.
