Marshmallow Treats

I made 2 batches just as told and didnt change a thing.I added green food coloring to the marshmellow of one batch after it was melted in the pan,then after it was all put together and done cooling,i used Christmas tree cookie cutters to make Christmas trees.I sprayed cookie cutters with cooking spray before cutting so it wouldn't stick.The other batch i left white and used snowflake cookie cutters.It worked really well and looked nice for my daughters Christmas concert class.

Peanut Butter Ice Cream Topping

Today my son and I made this together. He said it was quick and easy and he thought it would take longer to make this kind of sauce. We put sauce in the middle and on top of our ice cream. It was very good. I added a little less water and more peanut butter. Next time I may add even less water and sugar. Very good, though.

Italian Spaghetti Sauce with Meatballs

I only used the meatball recipe and I thought they were very good. I added chopped onion and green pepper to them, and instead of simmering them in the sauce, I spread just a little vegetable oil in the bottom of my electric skillet and lined up the raw meatballs in it. I covered with some additional chopped green peppers and onions, covered and cooked on 350 until browned and cooked through. I then poured spaghetti sauce evenly over the top of them and sprinkled shredded cheddar cheese and grated parmasan cheese over the sauce. I then covered and simmered until the sauce was warm and cheese was melted. If you cook the meatballs in a skillet though, keep a close eye on them so the bottoms don't burn, turn if needed. Great cheesy spaghetti and meatball dish!

Chicken Salad Spread

Loved this chicken salad! Instead of using canned chicken chunks I cooked boneless, skinless, chicken breasts in the oven seasoned with onion powder, basil and salt. When done cooking, I cut the chicken into small chunks and mixed with other ingredients. I didn't have any sweet pickles, so I added some sweet pickle relish instead. I also added some chopped red skinned onions. Very good!!

Yogurt Parfait

Nice, healthy snack, and good too. I used some honey granola cereal I had along with blueberries and sliced strawberries. Just about any kind of fruit would probably do well in this.

Good potato salad. I think I would have liked it even better if I had the celery seed and black olives to add. I did chop up some dill pickle slices and mixed it in.

Easy Iced Coffee

This tasted to me just like the iced coffee I get at McDonalds. I didn't have any instant coffee, so I brewed some strong coffee and poured about a fourth of a cup in a tall (about 16 oz) cup. I added a little less than a tablespoon of sugar,and 2 tablespoons of coffee mate vanilla caramel creamer and stirred until disolved. I then added milk, stirred and added a few ice cubes. My daughter had hers with whipped cream on top. I will probably drizzle caramel syrup on top of the whipped cream next time. Very, very good for a hot day.

Banana Pudding IV

This was a terrific banana pudding. It was made according to the recipe. One of my daughters thought it was a little too sweet, though, so I may cut down on the condensed milk a little next time and use fat free cream cheese.

Broccoli-Cauliflower Salad

This was very good, just too much dressing and too much sugar. Next time I am going to lessen both. I didn't have bacon so I added about 2/3 cup or more real bacon bits. I also used white vinegar instead of white wine vinegar. I mixed all of the ingredients together instead of layering and chilled it for a bit before serving.

Best Chocolate Chip Cookies

No more making the cookie recipe off of the chocolate chip bag after this one!! I did everything just as the recipe called for, but didn't have the walnuts. They are big, puffy, soft bakery style cookies instead of the flatter ones, that's what I love about these. This is a keeper to use again and again!

Chicken Fried Chicken

I intended on following this recipe to a T, but as I was about to cook, my computer was too slow in getting the recipe up, but I remembered the basics, so I put it together anyway. I just put flour in a bowl, without measuring, I added crushed taco shells, because I didn't have saltines, and I added some seasoned salt, pepper, garlic powder, and basil,(I didn't measure any of these, just seasoned to taste). After frying in the oil until browned, I baked in the oven for a while longer to ensure the drumsticks were cooked through. This was a very good recipe, and the family really seemed to like it.

Split Pea and Ham Soup I

I've been making this for years, and it is a very good soup. I don't saute the onions first, though. I just rinse and sort the split peas and put them in a crock pot covering with water, then add the ham bone, any meat I'm able to peel off of it, chopped onions, and some salt and pepper and simmer all day. Very tasty!

No Roll Sugar Cookies

These were so very good!!!! A little sticky rolling them into balls, but I put the dough in the freezer as each batch was baking, then took it out when it was time to make a new batch, and it made it less sticky and easier to roll. I also didn't have shortening, so I used sticks of blue bonnet margarine instead and they came out very well. I topped them with red and green icing that I made as the kids are watching a Christmas show tonight. SUPER RECIPE!!
