About this Cook
I am a middle school teacher. I love dogs and my garden and love being outdoors.
My favorite things to cook
I like savory things best. My favorite dish is gumbo with cheesy grits.
My favorite family cooking traditions
My family did not have many so I am working on creating some.
My cooking triumphs
I am still new to some of the fancier things and tried one of Emerils recipes and had to wing it because my puff pastry dough was dried out. I made a huge batch of pie crust and pulled it off.
My cooking tragedies
Too many to name. I once frosted a cake with a cake mix. I forgot to add sugar to pumkin pie on Thanksgiving....etc.

Coconut Curry Pumpkin Soup
This very very good. I used chicken broth and hot curry and it was so spicy and flavor filled both my husband and I loved it.

Mom's Zucchini Bread
This was a great starting place for the best zucchini bread I have ever tasted. I tweeked it a little. I substituted 1 cup w/w flour for one of the flours, added a touch of wheat germ, I cut the oil in half and added 1/2 c applesauce. I also used brown sugar and raw sugar and reduced the sugar by 1/4 cup. Next time I will try even less sugar... ( I am diabetic so trying to keep it a bit lower). By accident I forgot the nuts so I added them to the top at the last min. I think I like them better there.

Spinach Appetizers
This has been a family favorite for many years at my house. I add some hot pepper (pizza style) and my daughter adds a bit of french dressing. At Christmas time we call them Holly Balls, on St. Patrick's Day they are Lephrican Balls...I will have to try them with a dipping sause that sounds good.
