About this Cook
I'm the mother to 5 beautiful children. I stay home with them and also homeschool. I enjoy baking way more then I enjoy cooking. I have quite a fan club at my husbands work for my baked goods.
My favorite things to cook
Anything dessert is tops on my list to try. I also enjoy changing recipes to make them my own.
My favorite family cooking traditions
Christmas time is full of baking traditions. My Mom is a pretty busy lady so now all the baking lays on my shoulders during the holidays.

Kyle's Favorite Beef Stew
I'm not sure why some people thought this was bland. Everyone in my family, which includes 6 kids, loved it. I made very few changes to the recipe. Maybe more quality ingredients or type of onion, soup mix, wocestershire sauce, etc makes a difference? Only thing I would change next time is more carrots. The changes I made this time were slight and just a personal preference. I added a bay leaf in with boiling water and soup mix and then left it in the crock pot while it cooked. I used mini bella mushrooms because my store didn't have button mushrooms. Lastly, I used a sweet, soft red wine because that's what I keep on hand to drink. Delicious and will make again for sure! Would be great over mashed potatoes as well.

Pumpkin Cream Cheese Muffins
These were yummy! Only reason I didn't give it 5 stars is that I know, from experience, that cinnamon wasn't going to be enough to spice a pumpkin flavored baked good. Pumpkin is bland and generally needs more spice. I added nutmeg, ginger and cloves. The cream cheese mixture was runny, even after chilling. I tried to keep it from touching the paper cups, but it ran no matter what I did. I gave up and just put the cream cheese on top without worrying. Didn't cause any problems with the baking or the removal of the muffin from the paper cup. We have nut allergies in the home so instead of pecans, I used coconut and little nutmeg in the topping. Will be saving this recipe and making it again!

Maritime Blueberry Buckle
Delcious! I one and halfed (not double, lol) this recipe and baked it in a 13x9 casserole dish. It was very moist and flavorful and much better then the buckle I tried last year. It's very much like a blueberry muffin but the cake part is a little more cakey then a muffin.
