Chicken Enchiladas V
This is such a great emergancy dish, I've made it twice now when I had unexpected guests. Have gotten loads of praise both times.
It is so basic that it would be very simple to alter it to personal taste. Hatch peppers are in season right now, so I roasted peeled and chopped one up to add to the mix, yum. I also mixed a can of Rotel with about 1/2 cup of extra sour cream and poured over top before baking, kept them nice and soft.
I am anxious to try what one reviewer suggested with adding spinach to the mix; also want to experiment with some different cheeses. Thanks for this great recipe!
