Chicken Surprise
This was a very quick and simple recipe. I had to use what we had on hand, but it turned out very yummy. I already had cooked chicken and cooked rice in the fridge. I put 3-4 cups of cooked rice in a pan, added 1 can of Golden Mushroom soup, diced cooked chicken, 2 cans of diced tomatoes (we like them), and let it simmer. The other reviews mentioned the dish needed some seasoning, so I added salt and pepper, and topped it off with a good bit of Lowry's Lemon Pepper (not lemon-pepper seasoning, per se, but the actual lemon-flavored pepper, if that makes any sense). All in all, it was great. It freezes wonderful, reheats like a dream, and fills up hungry folks without breaking the budget.

Creamed Chipped Beef On Toast
Great recipe! FYI, on the lid for the jar of dried beef (Armour), it says "WHEN USED IN RECIPES, RINSE IN WARM WATER AND DRAIN." I just noticed this while opening it. I'd never have bothered to look if I hadn't read about rinsing it on here. I made this last night, and was surprised at how easy it was, even given the short, simple recipe. I worried that my roux wasn't thickening up enough, and stirred it forever, it seemed like, but when it came time, I added the beef and seasoning, tasted it, and could not believe how good it was. It tasted exactly like I remembered it! Thanks for a great recipe. =)
