Pork Loin Chops with Cranberry Maple Chutney and Roasted Root Vegetables

This was really tasty - and totally company worthy. For the chutney, I used half fresh and half dried cranberries, next time, I think adding some fresh ginger would be a really nice touch. For the vegetables, I added about 1 tsp of dried herbes de provence and only used 3 sweet potatoes and I added 1 sliced leek as well. The vegetables were really good and I will likely make them again just on their own. The only other change we made was to grill the chops - they end result was delicious.

Cheeseburger Soup I

This was really good - but doesn't look very appetizing. I increased the ground beef to 1 lb and kept everything else the same. We thought it was a good ratio and everyone enjoyed the dish - even the kids!

Almond-Crusted Halibut Crystal Symphony

I made this fish for dinner tonight and the end result was pretty good, but not spectacular I'm afraid. I did make the beurre blanc and as it was my first attempt I didn't really know what to expect. The end result was very tangy with the biggest flavour being vinegar. I think if I were to make this sauce again, I would look for a different recipe. For the fish, I followed the recipe with one exception, I did not brush the fish with egg, there was enough butter/oil left on the fish from frying that nothing else was required. If I were to make this again, I would skip the frying step as it's unnecessary and just ended up causing a few of my filets to fall apart.

Alicia's Aloo Gobi

I made this for dinner last night alongside Chicken Tikka Masala (also from this site), basmati rice and grilled naan, we really enjoyed the end result. I used ground cumin in place of the cumin seeds because that's what I had on hand, I omitted the turmeric because our local grocery store didn't have any, I reduced the amount of cayenne to about 3/4 tsp (kids don't like things spicy). I also omitted the beans and the garam masala (based on other reviews) and the end result was really good! The only change I will make next time is to stew everything together and only add the cauliflower for the last 30 minutes or so (I should note that I stewed mine for about 90 minutes).

German Apple Pancake

I made this for breakfast this morning and whlie hubs and I loved it, the kids were a bit indifferent. It was very easy to throw together and although I thought the 1/2 cup of sugar would be too much, it wasn't. We will definitely make this again (and make 'toaster pancakes' for the kids!)

Pasta Carbonara with Leeks and Lemon

Loved this - used less leeks (3, which might have stsill bit a bit much) and there was way too much lemon - I would cut that in half next time. The only other thing worth mentioning is that I used pancetta instead of bacon - which was good.

Stuffed Pork Chops I

I made these chops for dinner last night and we thought they were just ok. I used a box of cornbread stuffing and cut a pocket in my thick chops and stuffed them as well as put stuffing on top. I had to use cream of celery soup because that's what I had on hand. The end result was alright, not offensive, but no wow factor.

Flatlander Chili

My DH and I made this for dinner tonight and it was delicious...although we changed so many things that we probably should just post our own recipe! Here is what we did: cut the recipe in half to 5 servings; used 2 cups tomato juice; omitted the tomato sauce; added 1 can "spicy red pepper" diced tomatoes; 4 cloves garlic; omitted the green pepper; added 1 can kidney beans and 1 can brown beans in molasses; we also increased the amount of sugar to about 1 Tbsp and the amount of chili powder by an additional 2 tsp. We simmered stovetop for about 2 hours and then transferred to a slow cooker for about 3 or 4 hours. The end result was absolutely delicious served with sour cream, grated cheddar and sliced green onion.

Chicken Chimichangas with Sour Cream Sauce

Wow - I had no idea this was going to be so good until it was in my mouth! I followed the recipe with one exception - I omitted the canned chile's because I didn't have any one hand - and they weren't missed in my opinion. I didn't make the sour cream sauce, but rather just served sour cream on the side. The end result was ridiculously goood - hard to stop eating, authentic tasting chimichangas!

Overnight Caramel Pecan Rolls

I made these to have for breakfast on an overnight cottage trip with friends and they were a big hit. I did follow the recipe exactly, but next time I would make a few adjustments. There wasn't enough caramel sauce for our taste, so next time I will double the caramel and put a full recipe in each pan. As well, there wasn't quite enough sugar/cinnamon mixture for our taste, so I will increase this as well. Lastly, I rolled my dough out quite thin and as a result, I had to use more butter (close to a half a cup). All in all - a really nice recipe that I will make again with the modifications mentioned.

Heavenly Potatoes and Ham

I made this for my family last night using leftover ham from Christmas - everyone really enjoyed it although I did change recipe pretty dramatically. First, I sauteed, 1 medium onion, 1 medium carrot, 1 stalk celery and 2 lbs of potatoes in some olive oil. I then combined the soup, sour cream (about 3/4 cup), green onion, cheese, ham, salt & pepper. I added the vegetable mixture, put everything in a casserole dish and baked for 45 minutes after topping with a mixture of garlic, parmesan cheese and bread crumbs (and a drizzle of EVOO). The end result was really tasty, comforting food with a lot less calories given the omission of 1/2 cup of butter.

French Ham Cheese and Egg Fondue Casserole

Maybe I didn't cook this long enough...or maybe this just wasn't something that suited us - but I made this casserole for Christmas breakfast and nobody really enjoyed it (fail!) The texture was a bit weird...too moist for us and the flavor - although not bad - had no wow factor.

Holiday Brie en Croute

Amazing! What a huge hit as an appetizer before a big Christmas dinner. It was a huge appetizer that was very, very simple to make, but extremely impressive to all my guests (I was asked 4 times if I made it myself). I can't wait to make this again for our NYE party....but I will let it rest for about 30 minutes before cutting into it (did not do this the first time around).

Following the recipe is hard for me....but I did it anyway with this bacon. The end result was...meh. I made this bacon for Christmas morning and although hubs and I enjoyed it, most everyone else left it on their plate. :(

Chewy Peanut Butter Chocolate Chip Cookies

I made these cookies with my kids for Santa to have on Christmas Eve. They were easy to make with my small kids and the end result was good. The only complaint I have is that the cookies don't really spread (as noted by other reviewers), so we had to press them down if we wanted a thinner cookie.

Restaurant Style Sweet Potato Casserole

I made this casserole this evening as a side dish to grilled pork chops and although the end result was good, it was very sweet. I cut the recipe in half for all ingredients except for the streusel topping. I may try this again, but will reduce the amount of brown sugar by 50%.
