Pasta Carbonara with Leeks and Lemon

Loved this - used less leeks (3, which might have stsill bit a bit much) and there was way too much lemon - I would cut that in half next time. The only other thing worth mentioning is that I used pancetta instead of bacon - which was good.

Slow Cooker Beef Stew I

We made this for dinner last night - following the directions exactly and the end result was decent beef stew - but in no way will it replace my regular recipe (done in the oven over the hours of hours).

Stuffed Pork Chops I

I made these chops for dinner last night and we thought they were just ok. I used a box of cornbread stuffing and cut a pocket in my thick chops and stuffed them as well as put stuffing on top. I had to use cream of celery soup because that's what I had on hand. The end result was alright, not offensive, but no wow factor.

Flatlander Chili

My DH and I made this for dinner tonight and it was delicious...although we changed so many things that we probably should just post our own recipe! Here is what we did: cut the recipe in half to 5 servings; used 2 cups tomato juice; omitted the tomato sauce; added 1 can "spicy red pepper" diced tomatoes; 4 cloves garlic; omitted the green pepper; added 1 can kidney beans and 1 can brown beans in molasses; we also increased the amount of sugar to about 1 Tbsp and the amount of chili powder by an additional 2 tsp. We simmered stovetop for about 2 hours and then transferred to a slow cooker for about 3 or 4 hours. The end result was absolutely delicious served with sour cream, grated cheddar and sliced green onion.

Chicken Chimichangas with Sour Cream Sauce

Wow - I had no idea this was going to be so good until it was in my mouth! I followed the recipe with one exception - I omitted the canned chile's because I didn't have any one hand - and they weren't missed in my opinion. I didn't make the sour cream sauce, but rather just served sour cream on the side. The end result was ridiculously goood - hard to stop eating, authentic tasting chimichangas!

Overnight Caramel Pecan Rolls

I made these to have for breakfast on an overnight cottage trip with friends and they were a big hit. I did follow the recipe exactly, but next time I would make a few adjustments. There wasn't enough caramel sauce for our taste, so next time I will double the caramel and put a full recipe in each pan. As well, there wasn't quite enough sugar/cinnamon mixture for our taste, so I will increase this as well. Lastly, I rolled my dough out quite thin and as a result, I had to use more butter (close to a half a cup). All in all - a really nice recipe that I will make again with the modifications mentioned.

Heavenly Potatoes and Ham

I made this for my family last night using leftover ham from Christmas - everyone really enjoyed it although I did change recipe pretty dramatically. First, I sauteed, 1 medium onion, 1 medium carrot, 1 stalk celery and 2 lbs of potatoes in some olive oil. I then combined the soup, sour cream (about 3/4 cup), green onion, cheese, ham, salt & pepper. I added the vegetable mixture, put everything in a casserole dish and baked for 45 minutes after topping with a mixture of garlic, parmesan cheese and bread crumbs (and a drizzle of EVOO). The end result was really tasty, comforting food with a lot less calories given the omission of 1/2 cup of butter.

French Ham Cheese and Egg Fondue Casserole

Maybe I didn't cook this long enough...or maybe this just wasn't something that suited us - but I made this casserole for Christmas breakfast and nobody really enjoyed it (fail!) The texture was a bit weird...too moist for us and the flavor - although not bad - had no wow factor.

Holiday Brie en Croute

Amazing! What a huge hit as an appetizer before a big Christmas dinner. It was a huge appetizer that was very, very simple to make, but extremely impressive to all my guests (I was asked 4 times if I made it myself). I can't wait to make this again for our NYE party....but I will let it rest for about 30 minutes before cutting into it (did not do this the first time around).

Spiced Bacon Twists

Following the recipe is hard for me....but I did it anyway with this bacon. The end result was...meh. I made this bacon for Christmas morning and although hubs and I enjoyed it, most everyone else left it on their plate. :(

Chewy Peanut Butter Chocolate Chip Cookies

I made these cookies with my kids for Santa to have on Christmas Eve. They were easy to make with my small kids and the end result was good. The only complaint I have is that the cookies don't really spread (as noted by other reviewers), so we had to press them down if we wanted a thinner cookie.

Restaurant Style Sweet Potato Casserole

I made this casserole this evening as a side dish to grilled pork chops and although the end result was good, it was very sweet. I cut the recipe in half for all ingredients except for the streusel topping. I may try this again, but will reduce the amount of brown sugar by 50%.

These were a cinch to make. I used a small (15 ml) scoop and got about 70 cookies! If making the smaller version, I baked for about 15 minutes and they were perfect.

I made these for a treat the other night and they were delicious. The nutmeg flavor is just right. I did overcook mine a bit because the end result was a bit tough, so next time I will try baking for only 15 minutes.

Fiesta Cheese Rice

Taco Pizza

I made this for dinner last night and everyone - even my picky 3 and 5 year old kids - loved it! I mistakenly added 1 lb of ground beef to one pizza and although it wasn't horrible, it was too much meat. I would use 1/2 lb of meat for 1 pizza though. I also simply spread the beans on the crust and then spread salsa on top of that and finally topped with the meat. I baked it covered mozzarella/cheddar blend for 15 minutes and topped with lettuce, tomato, sour cream and more salsa. The end result was absolutely deliciouos and quick!

Italian Bread Wedges

Stuffed Pork Tenderloin

I made this for dinner the other night and my whole family enjoyed it. As always, I did change the recipe somewhat. I sauteed 2 cloves of garlic along with the onion until they were quite soft and almost caramelized, then I added that to a bowl which contained, fresh parsley, oregano and sage. I used crushed Ritz crackers in place of the bread crumbs, salt and pepper and 1 beaten egg. After butterflying the tenderloin, I pounded it out a bit and ended up just folding the top of the roast over the bottem (it was not thin enough to roll) and I secured with butchers twine after wrapping the whole thing in back (probably 4 slices or so). The end result was baked at 425 for about 35 minutes and it was just delicous served with onion roasted potatoes (also on this site). Thanks!
