Best Carrot Cake Ever
This really is the best. I've been asked to make this repeatedly for friends birthdays. A bit of work to shred all the carrots, but worth every bit.

Awesome Sausage, Apple and Cranberry Stuffing
I've made this 2 Thanksgivings in a row and it always gets rave reviews. The step of toasting the bread crumbs is key.

Eileen's Spicy Gingerbread Men
Terrific - I made these twice over the holidays, they are nice and spicy. The dough is a little soft to work with but they come out delicious.
