Nacho Chicken Casserole

This was very good, my family enjoyed it. I really decreased the fat, but it didn't taste like it was missing anything. I used chicken breasts, baked doritos, reduced fat cream of mushroom soup, FF sour cream, 1% milk, and reduced the amount of cheese. This kids especially enjoyed the orange color!!!

Stuffed Shells IV

We're trying to cut fat and calories, and this was the best stuffed shells recipe for this. I used fat free cottage cheese, used about 1/2 the parmesan cheese, and used less than 1 cup of mozzarella for the topping. I would rate what I made at about 4 stars...more cheese would have been tastier! But it was great as it was, and moreover, my 5-year-old loved them!

Easy, Crunchy Hot Dogs

I rolled the dogs in a hearty amount of ketchup and only a little mustard (personal preference), then rolled them in panko as another reviewer suggested. They were actually very good, as far as hot dogs go!

Stuffed Pepper Soup I

Added 1 cup uncooked rice to soup and let it cook, this was easier and very good. Still a thick soup; may want to increase liquid.

Meatloaf with Fried Onions and Ranch Seasoning

Excellent meatloaf! I had ranch dressing mix in a large bottle, so I used 1 1/2 tbsp, which was great. It does need some kind of a glaze on top, IMO.

BBQ Chicken Pizza

So, so good! I followed the suggestion to coat the chicken cubes in BBQ sauce before topping, and my chicken was moist. Used KC Masterpiece brown sugar BBQ sauce.

Sorry, we just didn't like these. The spice mixture was too strong, way too heavy on the cloves and nutmeg. My 7 and 5 year old daughters liked it.

Shrimp Rice Soup

This 'soup' was the consistency of oatmeal. It tasted like rice and the thick, cloudy water it was cooked in. I can't even say this soup had a delicate flavor...it was rice and water with some shrimp stirred in.

Egg Foo Yung with Mushroom Sauce

We really enjoyed this dish. The egg pancakes were very good, and the mushroom sauce would have been fantastic had it not been so salty. I think next time I will use 1/2 soy sauce and 1/2 water. I didn't have fresh mushrooms so I used canned straw mushrooms (the kind with black caps) and 4 dried shiitake mushrooms (after soaking in water). What wonderful flavor!

Sweet and Sour Pork III

This is a delicious dish, but WOW, that vinegar packs a punch! I would not use cider vinegar again, I think the flavor is too dominant. Next time I make this, I'll use 1/4 cup of white vinegar. I combined the meat and veggies and served the sauce separately. Very good!

Eggplant Delight

I made this as a side dish, but it could easily be a main course. It was so delicious! I used this recipe as a base and followed the suggestions of other reviewers. These were my changes: I seasoned the eggplant with salt, pepper, and granulated garlic. I topped with the onions, then parmesan cheese. This was topped with tomato, then cheese. I didn't have enough tomato for all the eggplant slices, and in tasting the finished product, the tomato slices were a WORLD better than the ones with no tomato. Also, I only had processed cheese slices; they were creamy, but I think a nice sharp cheddar would have been better. This will be a great summer staple!

Italian Peas

Very tasty and elegant way to serve peas. I had only canned peas, so used 2 cans. It would have been better with frozen, as the recipe states. I used a regular yellow onion, and 1/2 of it would have been plenty. A whole Vidalia or other nicely flavored onion would be best, as the is the predominant taste of this dish. Instead of the chicken broth, I used a whole bouillon cube dissolved in 1/3 cup water and used the whole thing. Extra salt was not needed. Very nice, easy, and versatile side dish! Thanks!
