Greek Chicken Pasta

Really good!! I changed the recipe a bit, so I couldn't give it the full 5 stars. I left out the lemon and feta, but added some chopped Italian sausage. I should have added an extra can of artichokes, because there weren't enough. Didn't feel like it really missed the lemon or feta. A definite keeper.

Crispy Dijon Chicken

It was very moist, but not flavorful enough. I used mayo instead of yogurt (no plain yogurt on hand), and changed the proportion to 1 part dijon and 2 parts mayo....but it still wasn't enough dijon: should have made it 2-3 dijon, 1 mayo or yogurt. Needed some salt too. I think with these adjustments, it will be much better.

Delicious Pumpkin Bread

Great recipe. I was able to fit the batter into two loaf pans. I substituted 1/2 the oil with applesauce as others suggested, and I chopped some fresh cranberries and put that in.

I've made this in the past, and was looking for the recipe again to make for Thanksgiving. It's a great recipe. Reading more recent reviews, I may add an extra egg this time, but otherwise...it needs no changes for perfection.

Amazing Chicken

I usually do chicken thighs and breast pieces (with the bone, minus the skin) like this, and it comes out so moist and flavorful. Most times I mix mayo with italian dressing for the coating before the crumbs. Great recipe, and you really don't taste any mayonnaise flavor if you lightly coat the pieces.

Ginger Glazed Chicken with Pineapple Salsa

It was pretty good, but I had to make a few changes. First, I cut back dramatically on the oils in the marinade...down to about 1/8 cup on the canola oil and 1 Tbsp on the sesame oil (it can have an overpowering taste). I used this marinade on pork tenderloin and marinated it only for an hour (so the acid of the pineapple juice wouldn't ruin the tender pork). Then the salsa needed something, so I added 1 Tbsp of corn syrup (not so sweet fresh pineapple) and some red pepper flakes. Maybe next time some mango or something added to the pineapple. The marinade was very tasty. Will also use this for chicken next time.

Bean Soup

I've always made my ham and navy bean soup this way, with the addition of a can of diced tomatoes or of plain tomato sauce (if the kids didn't want tomato chunks). Season to taste. sometimes I add a bit of thyme as well. Kids always like it and it's a nice hearty soup for the winter.

Herbed Turkey Breast

Nice selection of seasonings for the turkey....smells great cooking and tastes great too. Omitted the zest (used just the lemon juice) because the kids don't like strong lemon. Will use this for stuffed chicken as well.

Chicken Enchiladas II

How can you go wrong? This is a great base recipe with lots of room for individuality. With the green onions and chilis I added chopped roasted red peppers, and I added some leftover black beans to the enchiladas. To the sauce I added some cumin and chili powder. Yum,yum!!

Pumpkin Cake I

I was looking for a pumpkin cake recipe calling for a whole 15 oz can of pumpkin, so as to not adjust a recipe or waste any pumpkin. This was very good. I cut down on the sugar a bit (but should have left it the same) and I substituted 1/2 cup applesauce for part of the oil (good substitution). Also, I didn't have allspice so omitted it without adding more of the other spices....I should have though because it didn't have quite enough spice for me. I made cupcakes and they were a hit.

Black Bean And Corn Salad I

This is a great salad to bring to picnics because you don't have to worry about refrigeration. I like to use frozen corn instead of canned because it tastes fresher, and fresh chopped cilantro. I use more cumin than listed, and I also add some chili powder and the juice of a lime.

Apricot Lentil Soup

Really good soup! I read the reviews, and increased the spices, added curry powder, omitted the lemon, and also added about a half cup of garbanzo beans I had in the fridge. The flavors are better the longer it sits.

Easy Key Lime Pie I

Awesome pie, and very easy to make. I added about a tsp of sugar to the pie, and a drop of green food coloring. And I let it cook about 10 minutes longer as others have suggested.
