Marmalade Pork Chops
I simmer these chops in a covered skillet on the stove top rather than bake. They are very good served over rice and a nice change of pace from the grilled chops I usually do.

Chile Rice Casserole
As described it would be quite bland. However, I added salt, pepper, chili powder, cumin, garlic, and more cheese. I also used parboiled long grain rice instead of the instant. The result is a tasty change from Spanish rice.

Fabulous Cilantro Pesto
I love cilantro and pasta, so this sounded great. Tasting as I blended, I added additional lime juice and cayenne. That is because I love tartness and fire. Very good. Will make again.
