The roasting makes this potato salad unique. People ask me to bring this to events all the time. It's also very hearty because of the bacon and eggs. I do add dijon to beef up the flavor, and I do half Miracle Whip half Mayo.

I brought this to a Christmas party and it was gone before anything else they served. People even "oohed" and "aahed" when I took it out of the oven because it was so pretty!. My 3 and 5 year olds loved it too. When I combined the crescent rolls the dough was too long to fit on my baking sheet. The next time I made it, I just kept them separate and had to loaves instead of one long one. It was a little 'mayonnais-y" - next time I might use less mayonnaise and/or add some sour cream. Nice recipe!

Love this recipe! Very easy, and nice variation on a pot roast. Great for leftovers, too.
