Absolutely Ultimate Potato Soup

Um...WOW! Way YUM! I wouldn't change a single thing about this recipe, except the time it takes to prepare. But a little time investment yields a simply divine soup. To speed up the process a bit, I cooked the bacon in a large electric skillet and then started the vegetables in the dutch oven as soon as I had rendered enough of the bacon fat. The bacon finished cooking at the same time the vegetables were in process.

Sweetened Condensed Milk

I guess I thought this would taste very near to the canned product. It's not as close taste-wise as the canned, but the consistency is very good, and the taste is not so different that it changes the outcome of the recipe that drastically. I recommend trying it!

Pumpkin Dip

Kelsey's Favorite Stuffed Green Peppers

Great recipe! I tried it last night, and thought I was going to have to "doctor it up" with extra spices. I didn't change a THING and this was a rare hit with ALL 5 FAMILY MEMBERS. My husband, who's on a diet, told me he was sad he couldn't have another serving. This from the man who won't eat spaghetti! I did use quite a bit of garlic powder, salt, and pepper. This is going in the "permanent" file for sure!

Chai Tea Mix

This recipe is terrific! I used all the spices, including the suggested extras (except the white pepper - didn't have any on hand) and it's wonderful. I like mine over ice, although it's a little more watered-down if you don't wait until it cools first. Also, I like to make mine with 1/2 splenda, 1/2 sugar to cut the sugar content. Not as delicious as the boxed Tazo Chai you buy in the store, but nearly as good at a fraction of the cost. A real keeper!

Cinnamon Rolls III

What can I say that hasn't already been raved about these cinnamon rolls??? I've never made anything so terrific in all my life, and it was SOOO easy with my bread machine. The bread in the rolls came out moist and a bit chewy and substantial after baking (perfect for cinnamon rolls), the filling was wonderful yet simple (I left out the nuts because my Hubby doesn't like them, but it was terrific without) and the frosting was heavenly and not too sweet. Even as day-olds they were impeccable! (The recipe makes 12 LARGE rolls, and our family of 5 couldn't eat them all the first morning!) This is a definite "keeper" and probably one of those special "tradition" recipes that my family will savor time and again for years to come. Thank you soooo much for the terrific recipe!

Rayna's Peanut Butter Jammies

Yum! This was so easy and a nice change from regular french toast. I'm on a health kick, so I liked the inclusion of peanut butter for protein, and the jam in the center allows me to eliminate all that sugar from topping it with maple syrup. I used whole wheat bread, and it turned out very moist. This is quick enough to whip up even on school mornings. I only got the recipe last week and I've served it twice already!

Black Bean and Couscous Salad

I served this to guests and they raved and raved. It's so simple, yet delicious, colorful, and nutritious. I served it as a side with sausage dogs, but I think it would be great with garlic lime chicken. Perfect for summer. Yum!

Peanut Butter Cookies IX

These cookies were good, but not my all time favorite peanut butter cookie. Also, if made according to recipe, the cookies would be way too small. I made about 3 dozen cookies out of this recipe, but I don't think I'll be trying it again.

Southwest Chicken

Even my kids loved this, and gave it 5 stars before I even asked for their opinion! I added 1 cup chopped onion and 3 cloves of garlic, sauteed before adding the chicken, then added a LOT more cumin (to taste). I didn't have the can of corn, so we went without it and never missed it. Yum!

Broccoli Chicken Fettuccini Alfredo

This is terrific and easy! I added more chicken (1 pound total) because I want more protein in my family's diet. I also added more broccoli (2-3 cups total) to make this a complete, one dish meal. The kids loved it!

Spicy Shredded Beef

I added a can of mild green chilies, omitted the browning step and the oil from the recipe, then cooked it in the crock pot. Terrific with flour tortillas and shredded cheese! Each family member gave it 5 stars!
