Delicious Egg Salad for Sandwiches
This is a wonderful basic egg salad. It's great on crackers or as a sandwich. I followed some of the other suggestions and added a stalk of chopped celery and a few chopped sweet pickles. It was exactly what I was looking for.

Jalapeno Popper Spread
Oh my gosh, this is good! My guests couldn't get enough. It tastes EXACTLY like a jalapeno popper! I did take the advice of a couple of others and added Panko crumbs to the top. I sprayed the top of the crumbs with spray butter and baked it in the oven. It was crispy on top and creamy underneath. I also used the whole can of jalapenos, and it wasn't too spicy at all. I can't say enough about this recipe and will make it again and again! Thanks for sharing!

Grilled Tilapia with Mango Salsa
This was so good, fresh and healthy! My husband doesn't like sweet sauces on his fish, so I mixed up everything in the salsa except the mango and divided it into two bowls. I put chopped tomato in his to make a pico de gallo, and put mango in my half. It was delicious! The fish marinade had a wonderful flavor also. Will definitely make this again!
