Quick Lemon Dijon Chicken

We really liked this. One thing we did though was to not cook it with the cajun seasoning-- we left it for each of us and our kids to decide if and how much to sprinkle on. We also chopped up some red bell pepper and cooked it with the chicken.

Thai Spiced Barbecue Shrimp

Stellar. The weather was not conducive to grilling, so I poured the shrimp and the marinade into a skillet and simmered until the shrimp was done. My wife, daughter and I all loved it. My son, well, he is a spice-wuss so he didn't eat, but he said he liked the flavor if it wasn't so hot.

Italian Sausage, Peppers, and Onions

Very good. I followed the suggestion of another reviewer and added a can of crushed tomatoes (14.5 oz). Here is the sum of deviations. First, while the sausage is cooking in the skillet, I put the crushed tomatoes in a dutch oven on low. Then when I sliced up the sausage, I added it to the dutch oven. I then did the onions and the garlic, using olive oil instead of butter. Instead of wine, I used an equal amount of beer. At the step where the peppers and onions are tender, I emptied the skillet into the dutch oven, and let everything simmer on low for 1 hour. The last change was that the sauce was a bit loose, so a tablespoon of cornstarch mixed with a tablespoon of water, then added in with everything else. 15 minutes later, done.

Herbed Rice Pilaf

I rated it three, because I liked it. However, the wife and kids were so-so on it. HOWEVER, then I made it again, but changed it a bit. In addition to the celery, I added the same amount of chopped green bell pepper. And instead of chicken broth, I used 1 14.5 oz can of beef broth, 2 tbsp water, and 1 beef cube. I mixed those together, with the soy, the Worcestershire, the oregeno and the thyme, under heat until the cube dissolved. Then I poured over the rice and baked. This variation my wife and kids both raved over, and I would have rated 4 or 5 stars.

Grilled Salmon I

Wife liked it. Kids raved. It was simple. As with the review currently listed as 'most helpful', I did not grill but instead followed those directions-- bake at 450 for 12 minutes and then broil. However, where that review said to broil for 5 minutes, at 2 minutes it was looking quite done to me, and I took them out. Done perfectly! Yum.

Zucchini Saute

Very good. The mushrooms and tomatoes give it a great texture and flavor mix. I am not quite as sold on the way the Italian seasoning worked in it; I almost wanted a bit more of an Italian dressing taste, a bit more tang.

Anna's Amazing Goulash

This was good, but not quite as good as I was hoping for all the work. It made a TON, so we have plenty frozen and it did taste better the next day. My wife suggested just beef next time instead of the three different meats.

Chili I

This was pretty good. I could stand for it being a bit hotter, so next time I'll add some more red pepper. I made two changes, one out of necessity and one out of desire. I love green peppers in my chili, so I added two green bell peppers, chopped. The other change is that I used sweetened cocoa mix instead of unsweetened cocoa (since I had none of the latter) and to cut back on the sweetness overall I cut the sugar in half. This is another recipie which tastes better a day later.

My wife was skeptical, but when I made it she said it was absolutely fabulous. As a twist, the second time I made it she added in some small meatballs as well, which gave it a different but still good taste.

Gerry's Chicken Enchiladas

I love the recipies on this site. But with that said, this recipie is by far and away the best thing I have made. It is simply delicious. It is that good. It takes longer than the prep time indicates- reducing took forever. But it is not a difficult cook, every step is easy and not time consuming. It just takes a good while between steps. But the payoff is worth it. I loved it, my wife loved it, and so did the kids.
