Lemonade-Mint Iced Tea
Fabulous. I used this recipe as a basic idea for what I wanted. I didn't use regular tea. Instead, I used flavored (black cherry or raspberry) caffeine free tea so the kiddos could have some. I boiled 8 bags in 2 quarts of water (approximately). Instead of adding water and juice concentrate I added a bottle of Simply Lemonade. I only added 1/2 cup sugar to mellow the tartness. Adding the fresh mint the night before was the winning touch. EVERYONE loved it. Even the people who don't drink tea.

Carol's Chicken Salad
This recipe is good, but I had to change it a little (the second time) to make it great. I didn't use the entire can of water chestnuts...half was definately enough. I also added sliced almonds, shredded carrots and extra celery. A tad bit of chile powder gave it some kick. Very yummy on a croissant.

Baked Dijon Salmon
This was really good. I ate the whole fillet and I don't even like fish. I would have given it 5 stars except that there wasn't enough sauce. Next time I will double it.
