Cottage Cheese Chicken Enchiladas
This recipe was great. My husband cringed when he saw he cottage cheese, but he loved them. I added fresh chopped plum tomatoes, black olives, and scallions to the top before I baked them. I thought it added a good touch.

Tomato Bacon Squares
I make this every year for football games. It is a huge hit with the guys. I double the garlic mayo because I enjoy it more saucey. There have been 0 complaints!

Beef Tenderloin With Roasted Shallots
This recipe was great. The only thing that I did different was that I used 2 tenderlion steaks and pan seared them. My husband loved it. It is definately a keeper.
