Verdelho Spinach, Mushroom and Tuna Casserole
I thought this was awful. It took awhile to cook and was so bland. My husband wouldn't even eat it!! That says it all right there. To salvage it, I added parm. cheese, tomato sauce and a lot of Italian seasonings.

Spicy Bean Salsa
Loved it!! I served it for a party and couldn't get people out of the kitchen b/c of it. I omitted the green pepper & black-eyed peas. Also I just used oil and vinegar. Fresh cilantro and garlic make a big difference too. Definately let it sit overnight. So good!

Burgundy Pork Tenderloin
I've made this with chicken and it's just as tasty. I've also substituted mushrooms, spinch and onions. My guests all wanted to know the secret.
