Simple White Cake

Very dense, not fluffy at all. Added an extra 1/4 cup milk as the consistency of the batter was very thick.

Artichokes

Yum. Definitely make a dip to eat with these artichokes. As far as the level of water goes, use maybe 1.5 inches (in height) of water.

Spicy Black Bean Cakes

Yet another Meatless Monday. These cakes are a tad on the "sweet" side. The recipe definitely needs something else to balance out the sweetness of the yam.

Broiled Grapefruit

I have a grapefruit tree and never seemed to finish off the fruit. I'm sure this won't be a problem anymore. I will definitely be adding this recipe to my breakfast food :) I did omit the butter as it wasn't really necessary. Grapefruit is good without it.

Beetnik Cake

Good recipe, made "cupcakes" instead of cake. Consistency was more of a muffin than cake. I ground .25cup of flax seeds and added it to the dry ingredients before mixing all the ingredients together. May add double the amount of flax seeds next time.

Peanut Sauce I

WOW! I haven't had a good peanut sauce in years! So glad I found this recipe. I used the sauce as a "spread" for a tofu sandwich (for Meatless Mondays). I did use half of the vinegar, may try the full amount next time.

Real Hummus

Good recipe. Don't be afraid of the 1 teaspoon of salt, it's not super salty once you finish the recipe. If you're still not too sure about using so much salt, add it slowly & taste. I did this and the 1tp was actually not overpowering like I thought it would be.

Lemon Garlic Tilapia

I have never been a fan of tilapia, but I love this recipe. Great way to take out the overpowering "fishy" taste. I made two alterations, the first I let the fish soak in the lemon juice for 15 min. Also, I placed the tilapia in the oven for 10-15 minutes @ 400 degrees. Not too dry nor soft.

Cinnamon Pickled Beets

Very good! Sweet beets and the sugar/vinegar/cinnamon really helped to diminish the earthy beet taste. Also, the vinegar isn't that strong once this is ready to eat. I used fresh beets from my garden, just boiled 'em for an hour or so until they were tender.

Baked Bar-be-que Chicken

I used chicken breasts and baked them for the initial 1 hour then for an extra 20 minutes(instead of 30). The chicken was not dry at all--a problem I always seem to have with chicken.

Barbecue Tofu Sandwiches

Very yummy, and this will definitely depend on the quality of the barbecue sauce you use. Before frying the tofu strips, I sprinkled them with a bit of garlic powder. After adding the barbecue sauce I placed the tofu/onion mixture in the oven for about 30 minutes @ 375 degrees. I like it crispy.

Eggplant Rollatini

Very good! I'd give it 5 stars if it had a few changes. I "sweated" out the eggplant. I chopped up Bordeaux spinach and mixed it in the ricotta cheese. I also mixed in Romano cheese and roasted garlic in the ricotta. Super easy to make and you can make so many changes to the filling. Next time I'm giving Italian sausage a go.

BBQ Chicken Pizza I

I've always steered clear from trying BBQ chicken pizza, I'm glad I finally did--this was amazing! Quite a few changes were made; instead of Gouda, used mozzarella and no molasses was used (according to other reviews). Will use less barbecue sauce next time, maybe 3/4 cup. I was very happy with the way this turned out, I'll definitely be making this again and again.
