Simple Garlic and Basil Pesto
It was so easy and quick. I didn't have pine or brazil nuts, so I used sliced almonds instead for crunch. It worked out perfectly. I will definitely be making this again.

Elegant Orzo with Wilted Spinach and Pine Nuts
This was really easy and quick. It was missing something though, so I added chopped Italian sausage. Really gave the dish a much more substantial flavor.

Easy Chinese Corn Soup
We always ate this growing up, but my mom made it with 1 can creamed corn, 1 can kernel corn drained, 1/2 can water, ham and a two eggs. This got me through college! Thanks mom!
