Chicken Tortilla Soup I
I have made this soup a few times and I've finally got it nailed. I buy a rotisserie chicken and shred the breast meat. YUMMY. The meat is so much more flavorful. I use 3.5 cups of chicken stock and 1 cup of water. I use 1 tsp of cumin in addition to the chili powder and oregano. The magic ingredient is a jalapeno pepper, chopped, seeds and all. Adds just the right amount of kick. DELISH!!

Italian Sausage Soup with Tortellini
Very Yummy! Super flavorful. I followed the recipe almost exactly except that I added a tsp of fennel seeds when I cooked the sausage, and I used a large can of diced tomatoes instead of fresh. Also, I added a small hot pepper, chopped up. Crusty bread is a must. Husband loved it.

Butternut and Apple Harvest Soup
Really, really good soup. Definitely needs cayenne to be great soup.
