Tres Leches Cake
This cake is simply awesome! Melts in your mouth delicious, but very rich. Only suggestions - probably don't need to use as much of the whipped topping as called for in the recipe. Also, make sure the batter is fairly well leveled flat or the milk will pool along the edges.

Cod with Italian Crumb Topping
What a great and healthy way to eat fish! I followed the advice of others and used light mayo in place of the eggwhites. I also used a shallow jelly roll pan sprayed with nonstick spray which made the fish much more tender and prevented the breadcrumbs from burning.

Burgundy Mushrooms
Very good flavor, but I would use much less broth next time and add some butter to saute the onions. Otherwise, the recipe as called for is way too soupy.
