Chuck's Favorite Mac and Cheese

This is similar to my own mac and cheese. I just leave out the cottage cheese. (only cause that's not something that's used in my house) It's nice to get measurements to something I've always "winged".

Vegetarian Four Cheese Lasagna

This was so delicious!! I couldn't find pumpkin so I used sweet potato. I didn't boil my noodles either...just seal the lasagna tightly with foil while cooking. I'm amazed everytime I make this, it's so good. Try it without making changes!!

Brown Sugar Meatloaf

I've made this many times and it's been delicious. The last time I made it, I didn't have enough ketchup, so I used Sweet Baby Ray's BBQ sauce...that was some good eating(I put the b.sug and bbq sauce on top). I also added W sauce like others suggested and I use quick oats instead of crackers...yummy! Thanks for the recipe.

Sausage and Egg Casserole

This was good. I will add onion, bellpeppers and bacon (leaving the salt out) next time. I may even add mushrooms. This is a wonderful recipe that can be easily tweaked to add other ingredients that you like! It's also very EASY.

Vegan Red Lentil Soup

This was different. I think if I cooked it more, I could grow to love it. It's simple, hearty and adjustable. This was my first time cooking lentils, so I didn't know what to expect. My husband LOVES this soup. I did use sweet potatoes and doubled the recipe for my family. I also added extra veggie broth and water to get a somewhat thinner soup.

This WAS good! I followed the suggestions of others and added b.sug and garlic. I also put the sauce on the side (just in case). I will definitely cook the steaks in this next time. I will try the cheese suggestion too!!

Cheesy Catfish Chowder

Very unexpected! Not fishy at all. I tried it as written and decided to add a few things that were suggested after tasting although it was nice unchanged. I added garlic, thyme, and basil (tsp increments and tasted).

Black Beans

I actually use this recipe to cook most of my dry beans (black, red/kidney, pinto). I then use the beans in things like burritos, enchiladas or smother rice with them. No soaking! Just put them in the crock pot for 4-8 hours and let them cook. They always come out just right! Sometimes I omit the wine, vinegar and bellpeppers (just a personal preference, but it's okay w/them). The beans have a "mexi-type" flavor. I didn't have a problem with "tough" beans...but if you are skeptical, leave the salt out! **UPDATE**: I've made this recipe MANY times now and I truly appreciate this recipe! I've used it to cook beans for several other recipes on this site that require "canned beans" as well as fresh. The beans freeze nicely for later use. This is a great BASIC recipe that allows you to add as many or as few extras to it and it's still good. You can even use balsamic vinegar instead of distilled vinegar. The best part is that this is SO healthy! It has no additives or preservatives (you can barely find that these days)and it cost pennies to make!! One crockpot of these beans can make a few different meals! ENJOY
