Zucchini Alfredo
Yes, add more garlic and some onion, broccoli slaw. . . and increase the sauce a bit. But a great way to use zucchini - delish!!

Caribbean Zucchini Bread
I made one loaf and a pan each of mini (bake abt 15 min) and regular sized (bake abt 20 mins) muffins and my kids are devouring them! What a great way to sneak them their veggies!

Lori's Spicy Chipotle Lasagna
Terrific! Was looking for new ways to use the zucchini from the garden and this is a great new twist on lasagne. We love chipotle.
