You have to try this method -- don't get impatient with the batter setting time -- but definitely spice the chicken and batter until it smells right to you. So much better than drive-thru!

Great comfort food. I omitted the onions because we don't do onions. Make sure your main dish has great flavor as this does not have a strong taste. I use sharp cheddar. Don't try the microwave shortcut with the potatoes unless you absolutely know what you're doing -- it made my cheese sauce fail to be creamy (separated). Also, doubling the sauce recipe may cause you to spend more time heating the sauce than you think is necessary.

This recipe is so simple and easy. Total prep/cook time including uncooked rice is exactly an hour for me. I omit the water chestnuts and almonds and used medium grain rice (stickier than long grain). It cost me $9 in ingredients ($4 of it is Cheez Whiz) for 8 servings... not high in value, but wonderful comfort food.
